Fizz & Smash Biscuits for Jamie’s Food Revolution Day #FRD2014


Today is Food Revolution Day and this years theme is all about getting kids into the kitchen and excited about food.  These Coconut, Oat & Cornflake biscuits are great fun to make as there is fizzing, stirring and smashing action.  They are also pretty healthy and taste delicious! (For smaller kids they will need adult supervision as there is boiling water).

Makes about 18 – 20 depending of the creations the kids come up with!

Fizz & Smash Biscuits for Jamie’s Food Revolution Day


  • 1 1/2 C brown rice flour (or plain flour if no intolerances)
  • 1 C rolled oats
  • 1 1/2 C crushed cornflakes (this is where the fun starts for the kids, put them in a snap lock bag and smash away)
  • 1/2 C raw caster sugar
  • 3/4 C dessicated coconut
  • 175 g unsalted butter, chopped
  • 2 Tbsp Rice Malt Syrup
  • 4 Tbsp boiling water
  • 1 tsp bicarb soda


  1. Preheat oven to 160 degrees and line 2 baking trays with baking paper
  2. Put all ingredients into a large bowl and mix together. Make a well in the middle.
  3. Put butter & Rice Malt Syrup in s small saucepan over a low heat and stir until melted then remove from heat.
  4. Combine bicarb soda and water in a small jug - it will dissolve and then stir it into the butter mixture. It will fizz!
  5. Add the butter mixture into the dry ingredients and stir to combine
  6. Take heaped table spoons of the mixture and shape into biscuits on baking tray
  7. Bake in oven for 20 minutes or until golden.
  8. Allow to cool on trays for 5 minutes and then transfer to a wire cooling rack
