Lemon & Herb Salmon with Soy Soba Noodles



Healthy, nutritious, filling, and good for your brain – what else do you need for a midweek meal?  The quantities in this recipe serves 2 adults & 2 children.  Preparation is about 10 minutes max but for best flavours you should marinate the salmon for at least an hour.  Cooking time is 15 minutes and if you cook the fish with the skin on you limit your chance of over cooking.  This can be gluten free if you use GF noodles.  I like the soba noodles as they are made with buckwheat which is GF. You can also try this with a bed of Asian greens like buk choy.  Enjoy!

Lemon & Herb Salmon with Soy Soba Noodles


  • 4 fresh salmon fillets skin on (choose size to suit your family)
  • 4 - 5 sprigs fresh thyme
  • 4 - 5 sprigs fresh parsley leaves
  • zest of 1 lemon
  • 3 Tbsp olive oil
  • 3 - 4 handfuls baby spinach & baby kale
  • 1 spring onion (shallot) finely chopped
  • 2 cloves garlic, crushed
  • 1 packet (270g) soba noodles
  • 3 Tbsp soy sauce or tamari sauce


  1. Put salmon skin side down in a dish and sprinkle with parsley, lemon zest, 1/2 the thyme & a small drizzle of olive oil. Cover and refrigerate for at least 1 hour or overnight if you can.
  2. Bring the fish to room temperature before cooking & season with salt & pepper
  3. Bring a pot of water to the boil for the noodles
  4. Put 2 Tblsp of the olive oil into a large frying pan and heat, place the fish skin side down in the pan.
  5. Cook the fish over a medium-high heat for 5 - 6 mins or until the skin begins to turn crispy & golden brown.
  6. Heat 1 Tbsp olive oil in a wok or large fry pan
  7. Put the noodles in the boiling water and cook for 3 minutes, drain
  8. Add the crushed garlic, spring onion and the rest of the thyme to the wok
  9. Turn the salmon over in the pan and cook for a further 2 minutes or until it is just cooked through and pink in the middle. Take off the heat and rest
  10. Put the noodles into the wok and add soy sauce,baby spinach & kale and toss through with all the other ingredients until the spinach & kale has wilted.
  11. Place portions of the noodles onto plates and top with the salmon
