Pineapple Ginger Juice


January just shouts out GET HEALTHY to me (and it’s quite necessary at this point, total blow out over Christmas!). I find an easy way to help get back on track is through juicing and there are so many yummy fruits in season too.  I adore the pineapple plant, in fact have a bit of an obsession, but truth be told I don’t actually like the taste all that much, however put it in a juice and I’m slurping it up!  This is a really refreshing and healthy drink (but if you are in the holiday mood it would also be great with a splash of rum too!)

This recipe in the Thermomix makes 4 x 600mls jars so you may need to adjust your quantities depending on the size of your blender. Can be refrigerated for 24 hours.

Pineapple Ginger Juice


  • 350 g pineapple (about 3/4 of a pineapple), roughly chopped
  • 300 g granny smith apple (2 apples), roughly chopped
  • 110 g carrots, roughly chopped
  • 2 celery stalks, including leaves, roughly chopped
  • 3 cm of ginger
  • 400 g coconut water, (3 cups or plain water)
  • handful of ice


  1. Blend for 1 minute speed 10.
