Cold weather always means porridge in our house and even though we are now living in the tropics I like to pretend that the mornings are cool enough, even though winter lasted exactly 2 1/2 days here, and still have it regardless.  Purple Porridge is a quick, easy, healthy and nutritious start to the day.

Make your porridge your usual way, I like to soak mine in a saucepan over night in water and then add a cup of milk in the morning. Cook it on medium high until it starts to bubble.  For the added nutrient boost & purple part add 2 Tbsp of Linseed, Sunflower & Almond Meal (LSA) and 1 Cup fresh or frozen blueberries to the pot, stir through and you are done.  If you are not a fan of LSA adding just the linseed (flaxseed) or chia seeds is good and gives a touch of Omega-3’s to the start of your day.

Unfortunately my girls are currently refusing to eat porridge for some unknown kid reason but I have a goal to get them eating it by the end of winter.  Wish me luck!

If you are currently in summer (or the tropics) and hot porridge is not your thing you may like these Overnight Oats instead, breakfast is ready and waiting for you when you wake up so makes the morning get away even easier!
