Veal, Pork or Chicken Schnitzel


What’s for dinner tonight Mummy?  The never ending question in households around the world, right? We love a good schnitzel here and it doesn’t really matter what kind of meat, this one is pork but we are not fussy when it comes to schnitzel so chicken & veal are always well received too.

The whole meal can be made in half an hour and while not top of the healthy list you can balance it out with loads of veggies.  This recipe is for 4 people.  If you want to make it gluten free you could replace the panko with Gluten free breadcrumbs or try polenta.

Schnitzel & Veggies


  • 4 pieces of schnitzel, pork, chicken or veal
  • 1 egg
  • 1 1/2 C panko (Japanese breadcrumbs)
  • 1 sweet potato, peeled and chopped into wedges or chips
  • 2 potatoes, chopped into wedges or chips
  • 1 head broccoli, cut into florets
  • 1 zucchini, sliced
  • olive oil


  1. Preheat oven to 200 degrees and line a baking tray with baking paper
  2. Put potatoes and sweet potatoes on the baking tray, drizzle with oil and bake for 25 - 30 minutes turning about 3 times during the cooking
  3. Whisk the egg in a large flat based bowl and spread the panko on a plate
  4. One at a time coat the meat in the egg and then cover each side with the panko
  5. When the potatoes have 10 minutes to go, put about 2 tablespoons of olive oil in a fry pan and heat over medium high
  6. Steam or blanche the broccoli & zucchini
  7. Put the schnitzel in the fry pan and cook on each side for about 2 minutes or until cooked through and golden.
