Homemade Fish & “Chips” and a special sauce

This is a very common meal in our house but it’s the sauce that really lifts it, of course the kids won’t touch the “green sauce” and only want tomato but that’s ok at least they are getting a healthy meal into them!  I used flathead today but any white fish will do, just check it ‘s country of origin, your country is best, just think of how far it’s had to travel.

The Green Sauce is inspired by Alyce Alexander and her fantastic recipe in her Quick Fix in the Thermomix, “Verte  Sauce”.  for those without a Thermomix you could try this:

1 onion, peeled and finely chopped

50 g butter

100 g frozen peas

50 g chicken or vegetable stock

Melt the butter in a small saucepan then put the onions in and saute until they are soft and translucent.

Add the peas and stock and cook on a high heat until boiling and the peas are soft.

With either a stick blender or small blender whizz the mixture until it becomes a smooth sauce

Spoon over the fish, it’s delicious!

Healthy Fish & Chips

  • 1 large sweet potato, peeled and cut into chip shaped wedges
  • 2 potatoes, cut into chip shaped wedges
  • Olive oil for drizzling
  • 4 fillets of white fish
  • 2 cups frozen peas
  • 1 small head of broccoli

  1. Preheat oven to 180 and line a baking tray with grease proof paper.
  2. Put the sweet potato and potato wedges on the tray and drizzle with olive oil and bake in the oven for about 35 minutes until cooked through, turning once or twice.
  3. Steam fish and veggies for 10 - 12 minutes in the steamer. If you don't have a steamer, put the veggies in a saucepan of boiling water for 4 - 5 minutes until the peas rise to the top. The fish can be baked in the oven with the potatoes for the last 10 minutes drizzled with a bit of olive oil.
