Gnocchi with vegetarian pasta sauce


If you are in a hurry but want something nourishing and warm to fill bellies this is a great, quick and easy option.   If you don’t have time (or the inclination) to make your gnocchi from scratch go for a store bought packet (I used a gluten free one the other day which was great) but if you want to try it yourself here is a Step-by-step guide from  If you have a Thermomix the recipe in the Everyday Cook Book is a good one to use.

I do make my own pasta sauce and throw in loads of vegetables that get blitzed up so no one knows what exactly has gone into it, my recipe is here,  but if you don’t have time just buy a good quality pasta sauce.

It can be a very quick dinner, just boil the water for the gnocchi and when it’s boiling throw in the gnocchi and follow the packet instructions, it’s usually only a few minutes until it’s cooked.  Drain it and then put back in the saucepan with your pasta sauce, mix through and then serve with some grated parmesan on top.  Job done!
