Teriyaki Beef & Soba Noodles


I don’t think there is anything wrong with getting a bit of help from a bottle of sauce to speed dinner up, do you?  If you do have an issue with it don’t read any more but if you’re still with me teriyaki has proven to be a surprising winner around here lately.

This dinner can be made from start to finish in about 15 minutes – if you can marinate the meat for at least an hour if not over night it has a stronger flavour but if you don’t have time it doesn’t really matter – so it’s perfect for those nights when you don’t have much time.  You can use the exact same method for chicken or veal if you like


Teriyaki Beef & Soba Noodles


  • 500 g beef stir fry strips (you can do this with any meat of your choice)
  • 125 mls teriyaki sauce
  • 250 g dried soba noodles
  • 2 Tbs olive oil
  • 1/2 head broccoli, cut into small florets
  • 1 zucchini, thinly sliced
  • 1 shallot, sliced
  • 4 - 5 button mushrooms, thinly sliced (optional)
  • 1 bunch Chinese leave or 2 handfuls of baby spinach


  1. Put beef in a dish and pour over half the marinate making sure you cover all the chicken. Cover and refrigerate for at least 1 hour (if you have time).
  2. Boil a pot of water for the noodles
  3. Heat oil in a wok a large heavy based fry pan
  4. Add shallot and then beef strips, stir & cook for 2 minutes
  5. Put noodles in the boiling water and cook for 3 minutes or as per packet instructions, drain
  6. Add broccoli, zucchini and mushrooms (if using) to the wok and remainder of the teriyaki marinade, stir & cook for about 2 minutes
  7. Add noodles into the wok and mix everything together
  8. Add Chinese leaves or baby spinach stir through and cook until they have wilted
  9. Serve up & enjoy
