Jacket Potatoes….hot potato, hot potato!
This is showing my English roots I think calling it a “jacket potato” but it does still have it’s jacket on, doesn’t it! Given I’m in Sydney home of the “Wiggles” hot potato hot potato will also do.
These are filling, nutritious and healthy and a great way to use up left overs. Just give the potato a bit of a scrub, any potato will do I like to use sweet potatoes for a lower GI alternative, give them a few pricks with a fork and then put in the oven at 200 C for about an hour. To speed it up you can par boil the potatoes for 10 minutes and then reduce the baking time to about 30 minutes or there is always the microwave but I try not to use than unless I really need to.
(While you are baking potatoes you may want to put in an extra sweet potato to use for these fantastic lunchbox specials Sweet Potato, Maple & Chinese 5 Spice Muffins) if you are not ready to make them on the same day you can mash the sweet potato, put it in a zip lock bag and freeze it until you are ready.
There are any number of fillings you can put into your potato but here are a few suggestions;
Bolognaise & parmesan
Chilli con carne
Tuna, sweet corn & cheese
Baked Beans
Cheese & sour cream
Avocado & sour cream
Chilli con carne, avocado, cheese & sour cream
Shredded chicken, mayonaise & sweet corn
