Lamb Pita Pockets – left overs for lunch


So yesterday we had a very easy Roast Shoulder of Lamb and today with the leftovers we had Lamb Pita Pockets for lunch.

You can really do any filling you like but I used hummus, baby spinach & cucumber for these ones with a bit of salt & pepper.  I toasted the pockets first which gave them a nice added crunch.

Other things that would go nicely with lamb are a minty pesto & salad or tzatziki.  You could also do these in wraps, mountain bread or sandwiches.

Lamb pockets are great for lunch boxes giving a much needed protein hit in the middle of the day.

I have frozen the remaining lamb leftovers to make individual pot pies in a couple of weeks (recipe for that when I do them).
