This particular omelette was made by my egg chef extrodinaire husband.  We don’t often let him loose in the kitchen, the mess!, but he does eggs really well.  Omelettes are great meals for breakfast, lunch or dinner, they are so quick and you can get creative with fillings.  GT’s basic omelette recipe is below or, if you want, this dude, Mr Breakfast has 192 different omelette recipes to try, let me know if you find any winners!

Basic Omelettes


  • 2 eggs
  • 1 tbsp water
  • salt & pepper
  • butter to melt in the pan


  1. Crack the eggs into a small bowl. Add the water and use a fork to whisk until well combined. Season with salt and pepper
  2. Melt the butter in a medium sized non-stick frying pan over medium-high heat. Pour in the egg mixture, tilting the pan slightly to cover the base.
  3. Cook for 1-2 minutes or until the base of the omelette is set and starting to turn golden, the top should be still slightly fluid as it continues to cook through when it's folded over for serving.
  4. Use a spatula to fold the omelette in half.
  5. Flip the omelette onto a serving plate.
