Salmon & Quinoa Patties – leftovers in the lunchbox


I don’t know about you but my girls aren’t keen on sandwiches every day so I try, when I have the time and inclination, to mix it up a bit for them.  Last night we had Grilled Salmon and Vegetable Quinoa, there was a little bit left over so I used it to make lunch box patties.

So easy and actually very quick you can use any fish or meat you have and could replace rice for the quinoa.  I had about 80 g salmon (about 7cm of a small fillet) left and 160 g quinoa but it really doesn’t matter too much about measurements as you throw in an egg to bind them together.  You bake these so you can just put them in the oven and walk away for 20 minutes

I do mine in a Thermomix but you can do the same in a blender.  Recipe for both ways is below and makes 10 patties;


80 g fish

160 g quinoa (or rice)

1/2 carrot, 1/2 zucchini, mushroom if you haven’t had any vegies in your quinoa

1 egg

1 Tbs chia seeds (optional)

olive oil


Preheat oven to 180 degrees and line a baking tray with baking paper.

Put all ingredients into a blender or Thermomix and mix together. For the TM speed 4 / 3 seconds.


Scoop out tablespoon sized amounts of the mixture and form into balls and then flatten into patties.

Put patties onto baking tray and drizzle with olive oil.

Bake in the oven for 20 minutes, turning once if necessary.

Cool on trays for 10 minutes and then turn out onto a wire cooling rack until cool.

Keep in the fridge for up to 2 days or can be frozen for a month.
