Banana, Ricotta & Honey on Toast


Something a little bit special with really no more effort than a normal piece of toast.  Banana & Ricotta on toast is packed full of goodness as a great start to the day or a filling snack.  I was inspired when I saw a similar recipe in a Womens Weekly cookbook while waiting at the dentist – random but you never know when inspiration strikes!

It only takes 5 minutes to make.  The recipe below serves 4 so adjust to your needs and any type of toast goes depending on what you like.  At the moment I’m using either a wholegrain seeded bread or gluten free seeded bread but it would also be nice with rye, english muffin, fruit toast, sour dough, whatever you like – take your pick.

Banana & Ricotta on Toast


  • 80 g (1/3 C) ricotta cheese - go for low fat if watching your weight
  • 4 slices of bread
  • 2 bananas thinly sliced
  • 2 tsp honey
  • shake of ground cinnamon


  1. Toast the bread
  2. Spread the ricotta evenly between the slices of toast - nice & thick
  3. Top with banana slices, drizzle on the honey and then sprinkle with cinnamon
