Fish & Veggie Filo Pie


Well, this was an experiment that turned out mostly good!  3 out of the 4 in our family gave it the thumbs up!  It’s light, tasty and really healthy.   I did make it in the Thermomix but there is no reason why it couldn’t be made on the cook top and then popped in the oven.  I also used store bought Filo pastry which made it fairly quick to make too.

You can use any type of fish or prawns you like – I used salmon & flathead (mild white fish) as I know that our girls eat both of those.  You could also swap kale with spinach or silver beet or leave out but I like it in.

I’ve had my Thermomix for about 9 months now and haven’t often used all the pieces of it in one go but did for this one, made it so easy.  Anyway, here you go.  Let me know what you think of my fish creation.

Fish & Veggie Filo Pie


  • 300 g water
  • 300 g milk
  • 500 g fish or fish & prawns
  • 1/2 head broccoli florets chopped into bite sized pieces
  • 1/2 head cauliflower florets chopped into bite sized pieces
  • 1 carrot, peeled and chopped into bite sized pieces
  • 1/2 lemon, juice only
  • 2 stalks kales leafy part only, torn into bite size pieces
  • 1 leek, white part only roughly chopped
  • 15 g chives
  • 1/2 tsp nutmeg
  • a few grinds of pepper
  • 1 Tbsp vegetable stock concentrate
  • 4 Tbsp left over milk mix
  • 1 Tbsp olive oil & extra for brushing the pastry
  • 3 sheets filo pastry
  • 1 1/2 tsp sesame seeds


  1. Preheat oven to 200 C.
  2. Put the water & milk into the TM bowl and place the fish into the TM basket. Pour over lemon juice and then poach at 100 C / 10 minutes / speed 4.
  3. At the same time put the vegetables (except kale in the Varoma tray and steam on top of the fish for the whole 10 minutes. At 5 minutes to go put the kale in the top tray on to steam above the other veggies)
  4. Take the TM basket out and set the fish aside, leaving the liquid in the bowl steam the veggies (kale is probably done) for another 5 minutes / 100 C / speed 2 if required.
  5. Set the veggies aside and tip out the milk/water mix but saving 4 Tbsp of it.
  6. Put leek & chives into the bowl (no need to clean) and chop speed 6 / 6 seconds. Add 1 Tbsp olive oil and saute Varoma / 3 minutes / speed 1. (If veggies still need more keep them on top)
  7. Add nutmeg, a few grinds of pepper, vegetable stock concentrate and 4 Tbsp milk mix and combine 4 seconds / speed 4.
  8. Add the fish and mix through with the spatular breaking up some of the pieces as you go so it's flaked.
  9. Add the veggies (except kale) and mix through with the spatular.
  10. Brush a sheet of filo with oil and cut to the size of your dish (mine was 20cm x 20cm) place in the bottom of the dish then spoon half the fish mix into the dish spreading it out, top with half the kale.
  11. Put another layer of filo on top and then repeat with the remainder of the fish mix and kale.
  12. Brush the remaining filo with oil and scrunch it up in pieces to cover the top of the pie. Sprinkle with sesame seeds.
  13. Bake in the oven for 15 minutes or until golden.
