Meatballs, cauliflower mash, kale chips & greens


Does this meal look like it came out of an Ikea catalogue?  It hasn’t but when I plated this up it reminded me of the last time I had lunch there unfortunately the photo looks about as good as that meal (without the ligonberry jam, do you know what I’m talking about?) but this one tasted much better than it looks and, SURPRISE it’s cauliflower mash underneath not potato!  So the Paleo’s out there could be happy with this meal, maybe?

Anyway GT was away and I just wanted something quick and easy that I knew the kids would eat without a fuss.  Another surprise is that our girls love kale chips, happy days.

I baked these meatballs (less mess to clean up) which is why they don’t look as good as fried ones but they were very quick and easy to do, especially in the Thermomix but easy enough without as well.

Time Saving Tip: I made some into patties so that I could do mini burgers for the school lunch box the next day.

Beef Meatballs - Thermomix


  • 1 brown onion, halved
  • 1 garlic clove
  • 40 g butter
  • 500 g beef mince
  • 1 tsp dried oregano
  • pinch sea salt
  • 2 eggs
  • olive oil if you are frying them


  1. Preheat the oven to 130 C and line a baking tray with baking paper (if baking) or heat oil in a fry pan if frying
  2. Chop the onion and garlic in the Thermomix Speed 5 / 5 seconds
  3. Add the butter and saute for 5 minutes / Varoma / Speed 1
  4. Add the mince, oregano, salt and eggs, combine Speed 4 /Reverse / 20 seconds
  5. Scoop out tablespoons of the mixture and form into balls (you could make some into patties for burgers for another meal) and put on prepare baking tray.
  6. Bake in the oven for 30 minutes or cook in the frying pan for about 15 minutes turning regularly
