Pea & Zucchini Soup – for the Thermomix but you can also do it without


Pea & Zucchini Soup. Unlikely that my kids will ever want to eat this so am not even going to bother, it’s soup and it’s green, enough said really, even though they do eat everything that goes into it!

I usually spend the school hours racing around doing “stuff” and sometimes forget to eat properly myself, so, when I get a chance, I like to have some healthy, nourshing soups on standby. I’ve written about my Top 10 winter favourites before, but this one caught my eye when I was flicking through one of Pete Evans cook books, Healthy Every Day so I thought I’d try to adapt it for the Thermomix, it worked out just fine I think!  See below.

Recipe makes enough for 6 and can be frozen  (I have as the in-laws are coming to stay at the end of the week so need some for them!).

I got the thyme from our fledgling veggie patch/fairy garden -both the veggies & the fairies need some TLC I think, don’t you? Any advice is more than welcome.


Pea & Zucchini Soup – for the Thermomix


  • 2 leeks roughly chopped
  • 3 garlic cloves
  • 1 tbsp coconut oil (olive oil would also be fine)
  • 4 zucchini roughly chopped
  • 200 g frozen peas
  • 1 litre chicken or vegetable stock
  • 4 thyme sprigs, leaves only
  • 1/2 tsp grated nutmeg
  • 2 bay leaves
  • sea or rock salt & white pepper
  • 1/2 C hazelnuts (optional) for garnish


  1. If using hazelnuts, mill roughly on speed 7 / 7 seconds - set aside.
  2. Put leeks & garlic into TM bowl and chop speed 5 / 3 seconds, scrape the sides
  3. Add coconut oil and saute 3 minutes / Varoma / speed 1
  4. Add the zucchini & cook 5 minutes / 100 C / speed 1
  5. Add the peas & 500 ml of the stock. Cook 4 minutes / Varoma / Speed 1
  6. Add thyme leaves, nutmeg, bay leaves, salt & pepper and remaining stock (or until you reach the bowl capacity level). Cook 15 minutes / 100 C / speed 1
  7. Fish out bay leaves and then puree 20 seconds / speed 9
  8. Pour out into serving bowls and sprinkle with hazelnuts (if using)

If you don’t have a Thermomix you could do this on the cook top, just heat up the oil first finely chop the leeks & garlic then put them in the saucepan and then follow each of the steps – you may need to cook a little bit longer and then just put in a blender or use a stick blender to make into a soup at the end.

      You got that right! At least they eat the veggies whole so that’s something!

    I love zucchini soup and zucchinis are actually my youngest’s favourite veggie – so I definitely think I’ll be giving this a go.
