Quick & easy homemade Pizza


Everyone loves a bit of pizza don’t they?  We regularly have it for a quick & easy lunch or dinner that the girls can make themselves which they really love doing (except for the oven part of course) and given that we are in school holidays at the moment it’s an easy way of getting kids involved in the kitchen.

If I don’t have time to make up a batch of dough we use wraps, pita or mountain bread as the base, I usually have an emergency stash of pita in the freezer just in case.  They can be made and ready to eat within 15 minutes so great as a quick fix to keep hunger at bay!  For those with a Thermomix the Everyday Cookbook recipe is a great one to use for bases.

You really can have any topping you like, today we used lavosh wraps as the base, tomato paste, ham, topped with some grated cheese and on some, kale that once cooked went all crispy like kale chips.

Just line a baking tray with baking paper or use a pizza stone and preheat the grill of your oven to 250 C once you have assembled your pizza put them in the oven for about 5 – 6 minutes or until the cheese has melted then take out and slice up.

Serve with a salad or just as is.
