Tania Hubbard – Gluten Free Grain Free Delightful Lady & Yummy Bread


Last week I went along to Tania Hubbard’s Gluten Free Grain Free workshop not really knowing much about her or what to expect.  I was, in a word, “delighted”.  Tania is a refreshingly honest, engaging lady who is passionate about what she does and that in itself is infectious.  She gained a fan here. I also went, on the weekend, to Pete Evans, The Paleo Way workshop, similar topics but presented SO differently, I came away from that one feeling confused and to be honest a bit guilty and overwhelmed – what is the right thing to do, what am I doing to our children, is what they are saying real, is it a celebrity fad is it just another way for mother guilt to slip into our lives or is it all of the above????  I will post about that one separately when the brain has cleared!

Tania chose to do away with gluten and grains for health reasons and in a nutshell has been able to eat her way back to good health and is now a glowing advocate for gluten free and grain free.  My interest in going to Tania’s workshop was partly because of the blog and my foodie interest but mainly to find out more about how to cook gluten free as our Miss E  has a sensitivity to gluten and I was looking for inspiration – I came away with a whole lot more (including another cook book!).  There is a recipe further down, bear with me…

I liked Tania’s approach in that she is not doing this because it’s a fad, the latest diet to be on or a way to make a quick buck, it’s a way of eating that works for her and she is sharing her knowledge and passion (and has been for 15 years).  Tania appears to be well researched and comes from an angle of healing yourself through food.  She chooses to create recipes from scratch rather than adapt traditional ones.  I’m not advocating for a gluten free, grain free or Paleo way of life as that is a personal choice but because it is so topical at the moment I thought you might find Tania and her recipes interesting.

On to food then… Tania spent 2 years perfecting her gluten free, grain bread, sugar free, dairy free, yeast free bread so that she ended up with something that was light, tasty and so, so simple to make.  I have just tested it out and while I was at it also tried her Date Muffins, YUM!  So presenting…drum roll please….. Almond Chia Seed Bread.  It gets a drum roll because I never make bread and yet here it is from start to finish in less than an hour – will definitely be trying more breads from now on.  Recipe is through the link or keep on reading below


This really is so easy (I promise the recipe is coming, stay with me) to make and it keeps nicely for a few days (unlike a lot of GF breads).  Unfortunately because of the nuts Miss E can’t take it to school but she is going to have it for breakfast or like this with hummus & avocado as an after school snack.  I will make it on the weekend for sandwiches too.  In her cookbook, Tania also uses this recipe as the base for a Fruit Loaf and a Savoury Loaf, will be trying those out too.

Just a quick word on the book before we get to the recipe, Gluten Free, Grain Free Food We Love has been out since 2011. I didn’t buy this book for the visuals but the information and recipes in it are no nonsense, delicious, easy to make every day food, so right up my alley.  I really like the information given up front about what CAN go into a grain free pantry, Tania’s thoughts on sweetners, descriptions of additives (enlightening), label reading and some other kitchen notes about what she likes to cook with.  Because I have small children who do like “treats” in their lunch box the loaf, muffin and biscuit recipes are also very handy (my next post will be on the Date Muffins, I have adapted the recipe for the Thermomix).  I believe Tania has another book coming out later this year.

This bread is worth trying, let me know if you do.  Ok I told you I would get there, here it is….

Almond & Chia Seed Bread


  • 1 C Almond Meal (if you have a Thermomix to make your own mill the whole almonds speed 9 / 10 seconds)
  • 2 Tbsp Chis seeds soaked in 30ml water (soak for 15 mins)
  • 3/4 C Arrowroot, sifted
  • 1 tsp baking soda
  • 2 Tbsp Apple Cider Vinegar
  • 3 eggs
  • good pinch of salt


  1. Preheat oven to 175 C and line a small loaf tin or spring form tin with baking paper
  2. Soak the chia seeds in water while preparing the dry mix (stir to make sure all are covered)
  3. Add almond meal and salt and mix well
  4. Use a whisk to combine the dry ingredients and to help break up lumps if any
  5. Add eggs, soaked chia seeds and apple cider vinegar
  6. Combine everything well with the whisk until there are no lumps
  7. Pour mix (it's quite thick) into prepared tin and bake for 25 minutes or until golden on top and firm to touch.
  8. Remove bread from oven, turn out and cool on wire cooling rack

    Hello, lovely article and totally agree, I felt the same after attending one of Tania’s workshops a while back. (I didn’t go The Paleo Way workshop.)
    Thanks for the reminder…I am going to make this bread tomorrow.
