Kale & Walnut Pesto


This pesto goes with the  yummy Tortellini I posted about earlier this week but it deserves a post of it’s own as it’s a delicious raw dip or spread.  Drinking kale may not be your thing but as a pesto you may just like it, if you are already a fan of kale you will love this!

So easy to make and will keep in an airtight container in the fridge for 2 – 3 days.

Inspired by a recipe on Annie’s Eats


1 clove garlic

1/4 C (35 g) walnuts

1 1/2 – 2 C (55g) kale leaves only, roughly ripped

1/4 C (35g) olive oil

juice of 1/2 lemon

1/4 C (55g) parmesan

1/2 tsp sea salt


If you are using a Thermomix put garlic, walnuts and parmesan in the bowl and blitz 8 seconds / speed 9 otherwise put in blender and blitz until it looks like breadcrumbs.

Add salt and the kale and chop 5 seconds / speed 6 or in the blender until finely chopped

Add oil and lemon juice and combine all together 5 seconds / speed4 or in blender pulse until combined.

Makes about 1 cup
