One Tray Baked Fish & Veggies


one-tray-baked-fish-&-veg-webI found this recipe in our schools Cook Book that was produced a few years ago as a fund raiser.  We have such a multicultural little school so there are some fabulous recipes to try out and it’s always a source of inspiration.  This one tray baked fish & veggies dinner from my friend Jenny’s family is Mediterranean inspired, quick, easy, healthy and nutritious – what more could you want?

A great mid week meal, little fuss and you can really add whatever veggies you have lurking around (I did!).

One Tray Baked Fish & Veggies


  • 2 zucchini,sliced
  • 2 red onions, cut into wedges
  • 2 tomatoes, cut into wedges (I only had cherry tomatoes so halved those)
  • 1/4 C pitted Kalamata olives
  • 1/4 C olive oil
  • 4 fillets white fish (I used Bream), skin removed (I also only needed 3 as the girls had 1/2 fillet each)
  • (I also thinly sliced some sweet potato)
  • 1 small garlic clove, crushed
  • 1 Tbsp lemon juice
  • 1 Tbsp Dijon Mustard
  • 1/2 C fresh parsley roughly chopped


  1. Preheat oven to 200 C and line a baking tray with baking paper.
  2. Place all the veggies (and olives) on the tray and drizzle with 1 Tbsp of the oil, give it a shake so that everything is coated.
  3. Place the fish on top of the veggies and brush with 1 Tbsp olive oil and place in the oven and bake for 20 - 25 minutes until cooked through.
  4. While it's baking whisk together, garlic, lemon, Dijon mustard and remaining olive oil to make the dressing.
  5. Once cooked divide up onto plates and drizzle with the dressing and a scatter of parsley.
  6. Yum in your tum!

    loved the fish tray bake – the zuccini’s, sweet potato and olives went so well with the fish – thank Vick – great recipe!
