Coconut Rough Loaf – whipped up in 10 seconds, gluten & egg free


This recipe was inspired from The Road to Loving My Thermo Mixer and it totally tastes like a coconut rough.  It’s so quick & easy it’s a great one to have in your repertoire.  Perfect for lunch boxes, morning or afternoon tea.

I have deviated from the original recipe by using gluten free flour, rapadura sugar and raw cacao but click on the link above if you want the original or scroll down for my version.  It is a Thermomix recipe but you could achieve the same in an ordinary blender or with an electric mixer, it’s just that it only takes 10 seconds in the Thermomix.

Coconut Rough Loaf – whipped up in 10 seconds, gluten & egg free


  • 150g GF self raising flour
  • 80g desiccated coconut
  • 90g Rapadura sugar
  • 40g raw cocao powder
  • 35g coconut oil
  • 260g milk


  1. Preheat oven to 180 C and line or grease a small loaf tin
  2. Add all the ingredients into the bowl.
  3. Give it a blitz on speed 5 / 10 seconds.
  4. Pour batter into prepared tin.
  5. Bake for approximately 30-40 minutes or until slightly golden on top and cooked through.
  6. Remove from oven and turn out onto a wire cooling rack to cool completely
  7. Option to ice it if you want but I didn't bother
