Simple, quick & healthy fish dinner, kale chips optional!

simple-fish-and-greens-webYou know those nights where it’s warming up outside, you’ve been super busy and want something really simple clean, healthy and nutritious for dinner but have run out of time?  Oh yes, most nights!  This is a very basic but still filling, nourishing and tasty dinner that can be ready within 20 minutes from start to finish.  It’s suitable for the whole family so happy days!

What you need:

Any type of white, mild fish will do, enough to feed your family

1 head of broccoli

1 small head of cauliflower

1 – 2 C frozen peas

bunch of kale, leaves only

drizzle of olive oil

juice of 1 lemon

some grinds of sea salt or Himalayan Pink Rock Salt

What you do:

Preheat the oven to 180 C and line 2 baking trays with baking paper

Boil a saucepan of water

Place the fish on one baking tray and squeeze the lemon over the fish and drizzle with a little bit of olive oil. Bake in the oven to  10 – 15 minutes until cooked through.

On the other tray place the kale leaves, drizzle with olive oil and a good few grinds of salt (kale chips recipe here). Bake in the oven for 10 minutes, check and turn over during that time.

Meanwhile put your peas in the saucepan and either steam the broccoli & cauliflower on top, use steam oven or throw into the saucepan and cook with the peas (if you do boil the broccoli & cauliflower try to only cook them for about 3 minutes as you lose most of the nutrients into the water).

All going to plan everything should be ready at the same time to plate up and enjoy.

Oh look a healthy, gluten free, dairy free, grain free, sugar free dare I say it, paleo meal served up in minutes!
