A is for Asparagus in season right now. Linking you up to some delicious recipes
Asparagus is in season right now. It’s in abundance (love that word, do you?), at the moment in Australia as it’s a spring vegetable. Asparagus is low in calories, has a decent amount of dietary fibre and protein, is anti-inflamatory and has a wide variety of anti-oxident nutrients, bascially it’s good for you. It does have an unusual side effect of making some people’s wee smell (click here for a commentary from The Guardian on it but be warned some of the comments have gone off on a tangent about other smelly bodily fluids too) it has something to do with sulphur compounds in it breaking down during digestion or something!
Back onto the nicer side of asparagus I’ve pulled together a few delicious looking recipes and sending out some link love to the clever people who came up with them.
Erin, of Erin Made this was a fellow “Clever Cookie” on the blogging course I recently did and I have been admiring her Lemon, Ricotta & Asparagus Galette and her beautiful photo’s (like this one of the galette).
For a super simple side dish Jo-Anna of “A Pretty Life in the Suburbs” has a wonderfully quick & easy Roasted Asparagus recipe just convert 500 F to 260 C (yes it’s hot).

I have a very simple mid week Grilled Chicken, Asparagus & Spaghetti dish that I’ve talked about before and we had again this week.
And finally, I also love to just wrap a spear up in prosciutto!
