A Fair Dinkum Minty Lamb Salad – perfect for celebrating Australia Day!

G’Day, G’Day, have you got plans for Australia Day?  Need some tucker inspiration?

It’s been yonks since I’ve made it but this is one of my you beaut, tried and tested salads, Minty Lamb & Broccoli.  Full of flavour for your laughing gear to get around and deadset easy to make!  Struth I think that is enough Strine from me!  (Want more Aussie slang take a look at this list here.)

On to the recipe.  I’m not sure where it originally came from as it was hand written (by me) in my 20 year old recipe collection book and I’m sure I didn’t make it up myself then so Mum must have gotten it from somewhere, sometime… anyway here it is.  I hope you like it as much as we do.

Have a great Australia Day.

Minty Lamb & Broccoli Salad

4 - 6 as a meal more if using it as a side

  • 600 g lamb fillets or back strap cut into bite sized pieces
  • 2 Tbsp soy or Tamari sauce
  • 2 Tbsp olive oil
  • 2 small or 1 large head of broccoli, cut into bite sized florets
  • 200 g sugar snap or snow peas
  • 1 medium zucchini
  • 3/4 punnet cherry tomatoes
  • 1 C bean sprouts
  • 4 - 5 C baby spinach
  • For the Dressing
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp lemon juice
  • 3 Tbsp Olive oil
  • 1 tsp sugar
  • 2 small or 1 large garlic clove, crushed
  • 2 Tbsp fresh mint leaves, finely chopped

  1. Combine lamb & soy sauce in a bowl, cover & refrigerate so that it can marinate for at least 3 hours or overnight if you can.
  2. Heat oil in a pan, add the lamb and cook under browned and tender, cool (about 7ish minutes depending on your bite sizes!)
  3. Cook the broccoli & sugar snap or snow peas in your preferred way (steam, boil or microwave, steaming is always best) until tender, rinse under cold water to stop the cooking process and kep the bright green colour, drain well and cool.
  4. Using a vegetable peeler, peel the zucchini into ribbons.
  5. Combine lamb, broccoli, sugar snap peas, zucchini, tomatoes, sprouts and baby spinach in a bowl.
  6. Combine all the dressing ingredients together in a jar and shake well
  7. Pour dressing over salad and toss.

I do wish I could eat Lamb again. I used to be the biggest lamb pig, but then I got this stupid allergy to mammal meat and I cant eat it any more. Well I can, if I am prepared to stab myself with an epi pen lol. xx
