Cheesy Corn Bread Fingers – good for picnics and lunchboxes


I’ve been testing out new things to tempt my non sandwich eaters with in their lunch boxes when school starts again.  I know, too soon to think about it, although after Miss 6’s performance today perhaps not soon enough….but Life, Love & Hiccups inspired me by this post on great lunch box ideas.

This Cheesy Corn Bread is great for holiday picnics and hopefully will be a lunch box winner too.

Easy to make, just like a cake only savoury! I found a similar recipe in a book called “The Lunch Box” by Scholastic so thought it would be worth giving it a try.  8 out of my 10 taste testers loved it, no prizes for guessing who wouldn’t even try it!  My lunch at least is sorted for the next week anyway!



This can be kept in the fridge for about 5 days in an air tight container or  frozen for up to 2 months so you can make it now and pull it out when school starts!

Cheesy Corn Bread Fingers


  • 4 Tbsp unsalted butter, melted
  • 1 C fine polenta
  • 1 C plain flour, (I used gluten free)
  • 2 Tbsp brown sugar (optional if you are sugar free)
  • 1 tsp baking powder
  • 1tsp baking soda
  • few grinds Pink Himalayan Rock Salt or sea salt
  • 1 C sour cream
  • 2 eggs
  • 1/4 C milk
  • 1 1/2 C corn kernels (or 1 tin, rinsed and drained)
  • 3/4 C tasty or cheddar cheese, grated


  1. Preheat oven to 220 C. Line a lamington tin with baking paper.
  2. In one bowl mix together, polenta, flour, sugar, baking powder, baking soda and salt. Then add the corn and combine.
  3. In another bowl whisk the sour cream, eggs, milk and melted butter until combined an smooth.
  4. Add the wet ingredients to the dry and combine.
  5. Spread the batter into the prepared tin and sprinkle with the grated cheese.
  6. Bake in the oven for about 20 minutes or until an inserted skewer comes out clean
  7. Cool in tin for about 10 minutes then turn out onto a wire cooling rack to cool complete.
  8. Slice into fingers
