Going Troppo – Coconut Lime Biscuits


The heat is on and these Coconut Lime biscuits hit the tropical spot but also would be great in the lunch boxes now that the return to school is nearly here!  Easy to make and with a bit of zest are great for summer baking (or any time really!)

Both Thermomix & regular methods below for your pleasure!

Coconut Lime Biscuits Thermomix & regular methods

6 minutes

10 minutes

10 - 12 depending on how big you want your bickies!


  • 50g butter, softened
  • 75 g raw caster sugar
  • juice & zest of 1 lime
  • 1 large egg
  • 100g plain flour
  • 1/4 tsp baking powder
  • 50 g dessicated coconut


  1. Preheat the oven to 180 C and line 2 baking trays with baking paper.
  2. Peel the limes and grate to make zest speed 15 seconds / speed 7. Set aside
  3. Cream the butter and sugar together speed 5 / 15 seconds. Scrape sides.
  4. Add zest, lime juice and all the rest of the ingredients and combine speed 3 / reverse / 10 seconds to form a dough.
  5. Scoop out tablespoon sized bits of the dough and place quite well apart on the trays. Flatten with a fork.
  6. Bake for 10 - 12 minutes until golden. Remove from oven and cool on tray for 5 minutes and then transfer to a wire rack to cool completely.

  8. Follow all the steps but use a microplane or grater to get the zest and an electric mixer to make the dough.
