One for the Kids – Apple & Cinnamon Sun Pancakes – ok you can have some too

sunpancake-web“Good morning, good morning and how are you today”?  That song will be stuck in my head forever I think, it was what was sung every morning at my girls preschool (and that is a couple of years ago now).  Very sweet but not being a morning person myself, a tad too perky for me!

These sun pancakes are also very perky but they are so easy to make that it doesn’t matter if you don’t feel the same way, the kids will be happy and you can drink your coffee in peace while you wake up! Maybe, but they taste good and look cute anyway.

My girls take forever to eat breakfast, actually any meal really, A LOT of faffing about which drives me nuts, but these were gone in about 50 seconds and they kept coming back for more.

The pancakes are very easy:

What you need (makes about 12 medium sized):

1 C SR Flour (I used a gluten free one)

1 110 g jar baby apply puree

1 Tbsp cinnamon

1 egg

3/4 C milk

knob of butter for melting in the fry pan

What you do:

Whisk all together until smooth.

Melt the butter in the fry pan over a medium heat.  Drop dessert spoon sized blobs of batter into the pan and cook until air bubbles appear (about 2 minutes).  Turn over and cook the other side until golden.

Repeat until all the mixture is used up.

To make the “sun” you can use any fruit you like really.  I used thinly sliced strawberries for the rays, grapes or blueberries for the eyes, opposite for the nose and raspberries cut in half for the mouth. The sliced bananas are clouds!
