Summer Sips – Gin, Lychee, Mint & Lime Slushie


Oh hello there summery afternoon, fancy something cool, refreshing and delicious to sip on?  This Gin, Lychee, Mint & Lime Slushie is perfect for those balmy nights or hot afternoons or you could have the “mocktail” version for breakfast – it’s really good for you, it is!

Now this is not my original recipe although adding the gin is all me. The very clever Alyce Alexandra created this for her “Quick Fix:Every Occassion” Thermomix cookbook and I just love it.  It’s for the Thermomix but if you have a high powered blender that will do the trick too.

Summer Sips – Gin, Lychee, Mint & Lime Slushie


  • 565 - 600g can stoned lychees in syrup
  • 10 mint leaves
  • juice of 2 limes
  • 500g coconut water frozen into ice cubes (I used 2 ice cube trays which made about 400g but the gin balances it out)
  • 300g ice cubes
  • 150 g (3/4 C) of your favourite gin


  1. Put everything into the TM bowl and blitz for 1 minute, speed 9
  2. Garnish with mint leaves if you like then serve immediately!
  3. Enjoy

In the interests of the responsible service of alcohol you could serve these slushies up with:

Hummous & crudites or crackers

Broad bean dip

Minty pea pesto

Corn fritters with avocado & prosciutto

    This sounds so yum and like it tastes like summer! Cocktails are dangerously quick to make in the Thermomix, aren’t they?!

      Definitely a taste of summer and the ability to make cocktails in a flash was a big tick for me in getting the Thermomix! Thanks lovely lady.

    What a perfect summer cocktail! I don’t eat lychees anywhere near enough so this looks like the perfect reason to start buying them again!

    I can’t come at a lychee but everything else sounds yum! Am I crazy about the lychee thing?? Mint and lemon just tastes like Saturday afternoon!

      I wouldn’t normally go for a lychee either, don’t like them much but seriously you should give this a go (maybe as a mocktail in the next few weeks!!) tastes like summer!

      I’m sure you could make it in a blender it would just be more “granita” like than a slushie which come to think of it would be great!

    Oh. My. Goodness. This sounds all kinds of amazing! Love the idea of freezing coconut water in ice cube trays. We don’t have a Thermomix, but we do have a Nutri Bullet. Will definitely be giving this a go!
