Apple Cinnamon Cake in a very pretty pan (Thermomix & regular recipes)


When I stopped working in the corporate world, 3 years ago, I mistakenly thought life would be all about getting fit, coffee mornings and having the luxury of some time.  Could I have been more wrong?  Seriously, what planet was I on? I clearly forgot I had kids, a husband and a home! Who has time for that?  Who?

Well if it’s you, you might like to whip out this cake at your next morning tea as it’s delicious and sure to impress!  You thought I was going somewhere different then didn’t you?  Sorry, I am building up to writing a post on that but in the mean time let’s have some Apple Cinnamon Cake.

It is surprisingly easy to make and it doesn’t matter if you don’t have a pretty bundt tin like this one a round tin will also work plus your home will smell divine while it’s cooking.  My girls loved this for afternoon tea when Granny came over the other day and then it made it into the lunch boxes as a treat for the next couple of days as well.  This will become my go to cake for tea & sympathy times, winter weekends and show off days!

So I’ve got for you both traditional and Thermomix versions of this recipe, regular first and the keep scrolling for the printable Thermo one.  Also if you want to make it gluten free like I did just swap the regular plain flour for a gluten free one (I used the Orgran brand).

What you need:

For the cake batter;

½ cup butter

3/4 C raw caster sugar

2 eggs

1 tsp vanilla extract

2 C plain flour (a gluten free plain flour is fine)

4 tsp baking powder

1 C milk

For the apple mixture;

3 apples, peeled & chopped into small pieces

2 tsp cinnamon

¼ cup brown sugar

Cinnamon sugar to sprinkle at the end

What to do:

Preheat oven to 180 C and prepare cake tin.  If using a bundt tin grease and flour it otherwise just line a round tin with the baking paper.

In a bowl combine the apples, cinnamon and sugar and let sit for 5 minutes while you make the cake batter.

In an electric mixer cream the butter and sugar together

Add the eggs, one at a time, combine and then add vanilla

Add add 1/2 flour, 1/2 the baking powder and then 1/2 the milk. Repeat until all combined.

Put half the cake batter around the bottom of the pan and top with the apple mixture. Top with the cake batter

Bake in the oven for 45 minutes or until an inserted skewer comes out clean

Cool for about 10 minutes in the pan, then turn the cake out onto a cooling rack. Sprinkle with cinnamon sugar.

Apple Cinnamon Cake Thermomix


  • 3 apples, peel and chopped into small pieces
  • 2 tsp cinnamon
  • 1/4 C brown sugar
  • 150 g raw caster sugar
  • 75 g butter at room temperature
  • 2 eggs
  • 1 tsp vanilla extract
  • 220 g plain flour (or gluten free if required)
  • 4 tsp baking powder
  • 215g milk
  • Cinnamon sugar for sprinkling


  1. Preheat oven to 180 C and grease and flour a bundt tin if using. If using a normal round tin, grease and line.
  2. In a bowl combine the apples, cinnamon and brown sugar and set aside for 5 minutes.
  3. Cream the butter & sugar in the TM speed 5 / 20 seconds. Scrape sides
  4. Add in the eggs & vanilla and combine speed 4 / 6 secs
  5. Add flour, milk and baking powder, combine speed 3 / Reverse / 10 secs
  6. Put half the cake batter in the prepared pan and then layer with the apple mixture. Top with the remaining cake batter.
  7. Bake in the oven for 45 minutes or until an inserted skewer comes out clean
  8. Cool in pan for about 10 minutes and then turn out onto a wire cooling rack. Sprinkle with cinnamon sugar.
  9. Enjoy
