Pulled Pork Tacos with coleslaw

pulled-pork-tacos-webI follow a blog called Cooking in the Chaos and came across this amazingly easy and so very delicious slow cooked pulled pork recipe.  I’d been keen to try pulled pork for ages but had never got around to it until now.  You just need to load it all into the slow cooker in the morning, let it cook all day and then viola an easy, yet impressive dinner that makes everyone happy!

We had it when we had friends over for a quick “kids dinner” so made it into tacos, everybody likes tacos right??.  I separated half of the pork out for the tiny kids without the sauce and then sauced up the rest.  It was pick and choose hard or soft tortillas and then topped with a coleslaw (I made this Thermomix one).

Any leftovers (unlikely but you never know!) could be used in pita pockets, wraps or sandwiches the next day or do it all over again with tacos!

    Thanks for sharing, so glad you enjoyed the recipe. It’s one of those great meals that can stretch a long way and feed a crowd. I always try and save some leftovers to make pizza with too. xx

    I love the sound of this recipe, thank you! Am planning this for the weekend…do you happen to know of any brands of BBQ sauce that aren’t quite so full of preservatives that I could use for this? Or a recipe you may know of? Absolutely love your family meal planners…great, thanks so much.

      Hello! The Fountain Good Choice ones are refined sugar free. I will have a look into making our own though – I’ve got a good tomato sauce recipe that we could add some worchester sauce too that would work I think – will get back to you. x
