Quick, What’s for dinner tonight? Link Up #8 and last one before something new begins

What’s on for dinner at your house tonight?  I’m really loving discovering new meal ideas and some new blogs as well through this link up series.  But, because the link up is meant to a “party” I’m making some changes to make it more socialable and broader.  From next week, I will be joining with the lovely and talented Kim from The Land of Zonkt to co-host “Your Weekly Feed”, something we have cooked up together that we are quite excited about.

This is the last time the link up will be on a Wednesday, we are changing it to Sunday night so that you can have fresh ideas in your mind for meals the following week.  The link up meals will still have to be quick & easy but some may take a little bit longer than 30 minutes (some may take less!), some might be for breakfast or lunch too!  If you are a blogger you will be able to link from either here or Land of Zonkt but wherever you link up both sites will show it.  We still aim for it to be a really useful resource when you are looking for inspiration for “what’s for dinner tonight?”.

But before that happens on Sunday we’ve still got today and it’s winner, winner chicken dinner x 3!  From last week 2 delicious looking chicken salads caught my eye.

a really yummy looking Moroccan Chicken Salad from Bake Play Smile which would be nice warm or cold I think.

So in keeping with the chicken theme I’m plating up this Garlic Chicken Stir Fry with Buk Choy for you this week.  It’s super simple, quick and should (fingers crossed) appeal to the whole family.

Ok some may want to scrape off the greens but it can be made in 25 minutes and will fill everyone up.

Garlic Chicken Stir Fry with Buk Choy

Ingredients

  • 750 g chicken breast fillets thinly sliced or tenderloins
  • 1/3 C plain flour
  • 2 Tbsp peanut oil
  • 5 garlic cloves, crushed
  • 1 medium red capsicum, thinly sliced
  • 1 brown onion or 4 spring onions (whatever you have), thinly sliced
  • 1/3 C chicken stock or vegetable stock paste and water
  • 2 Tbsp tamari or soy sauce
  • 1 bunch (of 3) buk choy, roughly chopped
  • Rice or noodles to serve

Instructions

  1. Cook rice or noodles as per packet instructions - I used soba noodles which take all of 4 minutes
  2. Place flour and chicken in a freezer bag and shake so that the chicken is coated & shake off any excess
  3. Heat oil in a wok and cook the chicken in batches until browned and set aside
  4. Add onion, garlic and capsicum to the wok and stir fry 3 - 5 minutes
  5. Return the chicken to the wok and add the stock and soy sauce and stir fry all together until the liquid starts to boil and and thicken. Add buk choy and stir fry for about 1 minute until it wilts
  6. Place rice or noodles in a bowl and serve up the stir fry on top.

    Oh wow thanks for the feature lovely lady.
    I’ve made that salad of Lucy’s and it’s absolutely delicious!
    We love a good garlic dish here in the Zamamabakes household so I dare say I’ll be cooking up a batch of your Chicken Stir-Fry as one of our weekly dinners next week!

    Chicken is always good option! I will try this.
