Rosemary Prosciutto Chicken Drumsticks with creamy brown rice


Do you feel like chicken tonight? What I love about Rosemary Prosciutto Chicken Drumsticks with creamy brown rice is that it’s easy, tasty and a little bit fancy for a pretty basic meal.  It’s impressive enough for having friends over for an “early dinner” with kids or as a way to tart up a mid week meal.

No more boring chicken and rice! (Well there probably will be but not tonight!).

Rosemary Prosciutto Chicken Drumsticks with creamy brown rice


  • 8 fresh rosemary stalks
  • 8 chicken drumsticks
  • 8 slices of prosciutto
  • 1 C brown rice (or whatever rice you like, or pasta)
  • 1 Tbsp olive oil
  • 1 brown onion finely chopped
  • 1 garlic clove, crushed
  • 1/2 head cauliflower, finely chopped
  • 1/2 head broccoli, finely chopped
  • 300 ml cream
  • 1/4 tsp dried chilli flakes (optional)
  • 250 g cherry tomatoes (halved)
  • 1 Tbsp fresh thyme leaves


  1. Preheat the grill in the oven (250 C) Line a baking tray with baking paper and then put on the grill rack.
  2. Cook the rice as per packet instructions as brown rice can take up to 40 minutes to cook
  3. Put one sprig of rosemary on each of the drumsticks and wrap with the prosciutto.
  4. Put the drumsticks on the grill tray and cook under the grill for 5 minutes, turn over and cook for a further 5 minutes on the other side. cover the chicken with foil and then bake in the oven on 180 C for 25 - 30 minutes.
  5. With 5 minutes to go for the rice to cook add the cauliflower and broccoli to the pot or rice cooker and then drain once cooked
  6. In a frypan heat the oil saute the onion and garlic until the onion is translucent. Add the cream and chilli (if using) and simmer until it begins to thicken.
  7. Add the rice, broccoli & cauliflower to the cream with the tomatoes and half the thyme, cook stirring through until the tomatoes are soft.
  8. Put the rice mix in bowls and top with the chicken, sprinkle with the remaining thyme.
