Poached Egg with Miso Vegetables


I’ve fallen off the healthy band wagon a bit lately with late night snacking on corn chips and chocolate and it’s been a slippery slope from there. As a way to climb out of that I wanted to have something quick, clean and healthy for dinner, and, after seeing a friend add some miso to green beans the other day I got the idea to make this bowl of goodness, Poached Egg with Miso Vegetables.  As a meal it works for lunch or dinner, I’m not sure if all the kidlets would eat it, mine won’t so you may want to try out Chicken, Sweet Potatoes & Carrot Patties on them instead or Mince & Sweet Potato Croquettes both of which are good for lunch or dinner too.

This meal is also a great way to use up any crisper lurking veggies as anything goes really. If you like vegetarian then this is also a good one to add to the repertoire.

The recipe is for one serving so you just multiply depending on how many you are feeding.  If you want to add potatoes just start them a minute or two before the other veggies, see so many options! Here you go…

Poached Egg with Miso Vegetables


  • 1 Tbsp olive oil
  • 1 spring onion, finely chopped or 1/2 brown onion, finely chopped whatever you have
  • 1/2 zucchini, thinly sliced
  • 1 small carrot, peeled and thinly sliced
  • 1/4 red capsicum, thinly sliced
  • 2 - 3 mushrooms, thinly sliced
  • 1/2 C green beens, trimmed and halved
  • 1/2 C broccoli cut into florets
  • 1/2 C cauliflower cut into florets
  • 1 heaped tablespoon of miso paste or 1 sachet of miso
  • 2 Tbsp water


  1. Boil the water for the egg
  2. Heat the oil in a large skillet, fry pan or wok and add all the veggies, stir
  3. Add the miso and water and stir through to coat the veggies and cook until the veggies start to soften
  4. Poach the egg to desired firmness
  5. Transfer the veggies to a bowl remove the poached egg with a slotted spoon then place it on top of the veggies
  6. Season to taste and enjoy
