Your Weekly Feed #6 No More Boring Dinners!

It’s a long weekend here so a day off tomorrow, what are you getting up to?  We have enjoyed being at home (although the house packing has started in ernest now and I don’t think anyone would claim that being fun would you?) and loved seeing Vivid Sydney.  She really did turn on the lights!

Kim & I are delighted by all the positive feedback we are getting on Your Weekly Feed & I know that I’m loving getting all the meal inspiration, we haven’t had the same meal twice for weeks. My girls though are desperate for some spag bol so they tell me!

It was a week for soups last week and in keeping with my current love of cauliflower I couldn’t not pick Nancy from Plus Ate Six’s Cumin Roasted Cauliflower & Tahini Soup could I?

My other pick for the week was from Mrs D Plus 3 with her Thermomix Bacon & Broccoli Frittata a fantastic “go to” meal, we often have frittata for a weekend lunch or dinner so will be trying this one out for sure.

This week I’ve got a super quick & easy dinner for you that really can be ready in minutes Pea, Pancetta & Lemon Spaghetti (not the girls requested spag bol but still spaghetti and they loved it!).  It only takes as long as the spaghetti needs to cook and it tastes great.  My two had been off peas for about 2 years but have suddenly become obsessed with eating them frozen straight from the freezer, I don’t encourage that part but I’m so happy that peas are back on their yes list because I love them.  Long may it last but who can tell!?

This recipe serves 2 adults 2 children but just add more if you have more!

Pea, Pancetta & Lemon Spaghetti

Ingredients

  • 6 slices of pancetta (or bacon will do just fine)
  • 250 g - 500g packet of spaghetti depending on family size - I used a gluten free spaghetti
  • 1 lemon, juice & zest
  • 1 C frozen peas
  • 1 Tbsp olive oil
  • salt & pepper to taste
  • 1/2 C grated parmesan

Instructions

  1. Boil water for spaghetti and cook as per packet instructions
  2. As the water is boiling grill of fry the pancetta until crispy
  3. Combine lemon juice, zest, olive oil and salt & pepper in a jug
  4. Add the peas to the spaghetti water with 3 minutes of cooking time to go
  5. Break the pancetta up into small pieces
  6. Drain spaghetti & peas and put back in the saucepan. Pour in the juice combo and toss through the pancetta so all combined.
  7. Plate up into bowls, season to taste and top with grated parmesan

    I love the look of that pasta dish, so simple but so delicious! Vivid was ah-mazing wasn’t it? Every year Sydney seems to outdo itself! Hope your long weekend is full of deliciousness x

    What Sammie said – looks delicious. I do a similar pasta but with smoked salmon, the pancetta is a nice variation.

    I’ve got a funny thing about peas being ‘in things’. I love, love, love them by themselves, but put them ‘in’ something and you’ve lost me. How weird am I? x
