Your Weekly Feed # 8 Winter Comfort Food Edition

How was your weekend? I hardly ever get to the movies these days but we saw 2 in less than 24 hours this weekend – both kids movies. The new “Minions” one which was screened as a fund raiser for the girls school, really fun movie and night out and “Inside Out” for a birthday party which was a fabulous movie and very relevant given what we are about to embark on in a few months.  I recommend both if you are looking for something to do on rainy days or in the school holidays.

Before holidays though, we still need to decide what’s for dinner don’t we?  Last week in Your Weekly Feed we had some great meals linked up, my picks were;

One for the kids from Zamamabakes Oven Bakes Chicken Bites (with hidden veggies!).

and one for the grown ups. I would love it if my girls would eat soup, we are getting there slowly but this Spicy Tomato Soup from My Brown Paper Packages,  I actually made during the week for my lunch and can vouch for it being delicious, and there was none left for the girls to try anyway! It’s got beetroot in it for an added depth of colour and flavour.

As for me, I’ve got some good old comfort food to share this week, Braised Spice Chicken with Cannellini Beans & Vegetables.  It’s a 2 pot wonder, quick, easy, tasty, gluten free and healthy can you ask for more?  Well yes, but that’s all I’ve got tonight!  Here is the recipe and then keep scrolling down to see what else is cooking in kitchens this week, also don’t forget to check back during the week to see all the latest additions to the link up.

I used a combination of chicken thighs (for the girls, no bones) and lovely legs for us but whatever you like will work.  Ok so not the prettiest of pictures but stay with me here.

Braised Spice Chicken with Cannellini Beans & Vegetables

  • 2 carrots
  • 2 parsnips
  • 2 small leeks (or 1 big one) white part only
  • 4 garlic cloves
  • 6 chicken thighs or lovely legs (or combination)
  • 150 ml olive oil
  • 2 tsp Chinese 5 Spice powder
  • 1 Tbsp smoked paprika
  • 1 x 400 g tin cannellini beans, rinsed and drained
  • 1 L chicken stock or bone broth
  • salt & pepper
  • handful of parsley

  1. Preheat the oven to 180 C
  2. Peel carrots & parsnips and chop into small chunks. Thinly slice the leeks.
  3. Sprinkle the chicken with the paprika & Chinese 5 spice powder
  4. On the cooktop heat the oil in an oven proof pot and brown the chicken & vegetables.
  5. Add the cannellini beans, garlic, stock, stir and season to taste
  6. Transfer the pot to the oven and cook for 30 minutes.
  7. Remove the chicken & vege and keep it warm. I find the easiest way to do this is to get a big colander and pour everything into that with a saucepan underneath catching the braising stock. Put the chicken & vege back into the pot that you used to cook in and leave covered in the warm oven until you are ready for it.
  8. Boil down the remaining braising stock, add the parsley at this point, in the saucepan on the cook top until you have a good looking, thickish sauce. If it is too liquid thicken with a tablespoon of cornflour diluted in cold water.
  9. Divide the chicken & vege into 4 bowls and pour over the sauce, garnish with some more parsley and enjoy!

You will be full and warm in no time after eating this and it’s mild enough for the kids to enjoy too (here’s hoping anyway)!  Shall we pop over to see what’s going on in the Land of Zonkt kitchen?  Kim always has such yumminess. If you are a blogger and have a recipe to share we’d love you to link up below too so that we can all get some meal inspiration.

Those chicken bites look perfect with the hidden veggies. I am currently working on Ari to start eating chicken nuggets again. They got kicked out of the very limited things he will eat list a while back! Hurts my brain! lol
