Poached Chicken, Avocado, Broccoli & Brown Rice Salad


With Spring in the air it’s making me want to eat a little bit lighter and cleaner than the belly warming winter food so this warm Poached Chicken, Avocado, Broccoli & Brown Rice Salad fits the bill nicely.  It’s also simple to make, quick and pretty healthy plus it’s a meal the whole family can enjoy (fussy eaters aside because there is no pleasing them is there and in my house you can never tell from day to day what is on the “yuck I don’t like it list”, she won’t starve so I make what the rest of us like and it’s up to her if she goes hungry or not these days!).

Anyway my dinner table woes are not what we are talking about today instead here is the recipe so you can have an easy dinner on the table without too much thought or effort!  The dressing adds a little zing too.

Poached Chicken, Avocado, Broccoli & Brown Rice Salad


    For Poaching the Chicken
  • 2 chicken breasts (you could use a BBQ chook or left over roast chicken if you didn't want to poach)
  • 2 bay leaves
  • 2 cloves garlic, smashed
  • 1 spring onion, roughly chopped
  • a few grinds of salt & pepper
  • For the rest of the salad
  • 2 C brown rice, cooked as per packet instructions (can be made ahead and headed up)
  • 2 avocados
  • 2 1/3 C broccoli florets
  • 4 spring onions, thinly sliced on the diagonal
  • For the Dressing
  • 2 Tbsp lemon juice
  • 1 Tbsp sweet chilli sauce
  • 1 Tbsp soy sauce or Tamari
  • 2 tsp olive oi


  1. Heat a thin layer of water in a large pan, place the chicken breasts in the bottom of the pan and top with water until they are just covered. Add all the aromatics and cover. Bring to the boil and then simmer for 8 - 10 minutes until they are cooked through.
  2. Once cooked remove from the water and shred with 2 forks
  3. In the meantime steam or blanch the broccoli
  4. Divide up the rice, chicken, broccoli, avocado and spring onion between 4 serving bowls
  5. To make the dressing combine all the ingredients and the then pour over the salad
  6. Toss through and eat warm
