Walnut & Goats Cheese Pesto Pasta


This Walnut & Goats Cheese Pesto Pasta is so quick and easy to make it’s perfect for those nights when you have no time and it’s also great for those days when you want to go meatless too.  The pesto on it’s own makes a great dip and can be made ahead and kept in the fridge for up to 3 days.


Walnut & Goats Cheese Pesto Pasta


  • 1 C (100g) walnuts
  • 1 clove garlic
  • 80 g parmesan
  • 60g marinated goats cheese
  • a few grinds of salt & pepper
  • 30 g olive oil
  • juice of 1/2 lemon
  • 1 packet of spaghetti


  1. In a Thermomix or blender blitz the walnuts, garlic and parmesan (speed 9 / 8 seconds) to form a paste.
  2. Scrape sides
  3. Add the goats cheese, salt, pepper, olive oil and lemon juice and blitz again (speed 6 / 6 seconds).
  4. Set aside (if you are not using straight away put a layer of olive oil over the top and seal in a container then refrigerate for up to 3 days).
  5. Cook the pasta as per packet instructions, drain and put back into the pot. Add a heaped dessert spoon of the pesto and stir through.
  6. Serve up into bowls with a small dollop of the pesto on top and a couple of walnuts as garnish!
