Your Weekly Feed # 11- Mid Week Meals

Sunday again and sadly (for me, how about you?) the end of the school holidays.  We have had such a great holiday just staying in Sydney. Perhaps it’s because we are about to be living in perpetual summer that we have really embraced all things wintery, a lot of ice skating, rugging up in layers, hot water bottles and hot chocolates, lots of hot chocolates!  I hope that you have had a good couple of weeks too.

Because of the holidays things have been a little slow in my kitchen so it’s been good to see some inspiration on Your Weekly Feed for some new ideas.  The girls and I did have a fun day in the kitchen making Land of Zonkts goyza’s and Bake Play Smile has dessert covered with these 3 ingredient Tim Tam Cheesecake balls, yum.

I’ve gone the vegetarian route though for my picks from last week.  This healthy Veggie Quiche from Peregrination Gourmande sounds lovely and while it’s summer over in France where Cathy is this would be lovely straight from the oven too here in our winter.  I love the pink from the beetroot (Thermomix & regular methods included).

Ok so this next one this is not strictly vegetarian because it does have bacon but the classic Cheesy Mac is back and this is a great version of it from Create Bake Make.  This brings back childhood memories for me, Mum made it a lot and would put tomato slices on top!

So onto this week, my contribution is, when you take it down, fancy meatballs really but they are so yummy, Chicken, Mozzarella & Prosciutto Parcels (parcels = fancy!).

I saw a similar recipe to this in one of the trashy mags (I look at them for research purposes of course!) and thought that I could give my own version a try and here it is, ta dah!  For the girls I made theirs smaller, more meatball shaped. Because my fussy one would have objected to yummy oozing cheese I put the mozzarella inside the meatballs instead of on top for her and left off the prosciutto, she ate them right up and even complimented me on them!  My Mum taste tested the grown up version and gave them her tick of approval too!

Makes 8 parcels and as a variation you could add any veggies of your choice.  I served it with steamed veggies, salad would be nice too.

Chicken, mozzarella & prosciutto parcels with steamed veggies

Ingredients

  • 750 g chicken mince
  • 50 g of breadcrumbs (I used quinoa flakes to make the gluten free)
  • 1 onion, grated
  • 1 zucchini, grated
  • 4 - 5 mushrooms, finely chopped
  • 1 egg, lightly beaten
  • 7- 8 basil leaves, finely chopped
  • 200 g or 8 slices of mozzarella
  • 8 slices prosciutto
  • veggies of your choice

Instructions

  1. Preheat the oven to 180 C and line a baking tray with baking paper.
  2. Regular method
  3. Combine mince, breadcrumbs, onion, egg & basil in a large bowl, season to taste and mix well
  4. Thermomix method
  5. Put onion, zucchini, mushrooms and basil in the TM and chop, Speed 5 / 4 seconds. Scrape sides.
  6. Add the mince, egg, breadcrumbs, salt & pepper and mix Reverse / Speed 5 / 18 seconds
  7. For both methods
  8. Take out large dessert spoon sized balls of the mixture and shape into logs.
  9. Place a slice of mozzarella on top and then wrap with a slice of prosciutto.
  10. Put on the baking tray with the overlapping part of the prosciutto at the bottom
  11. Bake 25 - 30 minutes until cooked.
  12. While the chicken is cooking steam veggies or make salad
  13. Cool the chicken parcels on the tray for 5 minutes then plate up with the veggies or salad

    I’m glad you like the Gyoza hun,
    One of my all time favourite things to consume… A LOT of. lol

    Those chicken parcels look the absolute business! I want them, bugger the kids. lol x

    Yum! Love me some gyoza and those chicken parcels look delicious! Great picks this week,when vegetarian food looks this good, no one misses the meat!
