While Mum’s Away – Easy & Freezable Meals for the Family

I’m very excited to be going away next week on my first ever blogging conference, yes there is such a thing!  ProBlogger is hosting a conference on all things blogging on the Gold Coast and I will be away for 4 days.  I’m excited because of all the things I’m going to learn, to be meeting, in real life, people I’ve got to know through the blogging world and being in only adult company for 4 days, on the Gold Coast!!! Happy, happy days.

Do you leave your family to fend for themselves on the meal front if/when you go away or do you like to stock up the fridge & freezer for them?  It’s interesting, I’m on my own with the girls most of the time and nobody thinks twice about what the family will be eating but when the Mum goes away……(that could take us to a whole different topic, one for another day perhaps?).

I could let them fend for themselves and they would survive just fine for 4 days on hot chips, sausages, ice cream and the school canteen which is what would probably be served up if I didn’t do anything but being a control freak on the food front I like to have something reasonably nutritious available for them so that means stockpiling food in the days leading up.

Anyway it got me thinking and so I put together this…While Mum’s Away – Easy & Freezable Meals for the Family. Actually I shouldn’t make it just about when Mum’s away, should I? Here’s a list of easy food for when the main household cooker is away:


Banana Bread is always a winner in lunch boxes and you can make a loaf in advance and put away some slices in the freezer for when you are away (and also for the day you get back when there is nothing and it all gets handed back over to you again anyway!).  If you click on the link it will take you to my all time favourite Banana Bread and a really, really good gluten free one too – 2 recipes in one post!

I used to make these faces on the pies when the girls were younger (and had to hide the mash in one of the pies) but now I just make a big one for all of us but you can’t go past a good Shepherds pie (standard one) or a yummy spiced one can you and it’ just needs to be heated up.

Honey Soy Chicken Wings / Bits  with rice and veggies is another meal that just needs to be whacked in the oven.


You can prepare the marinade in advance and throw in the chicken with it in a zip lock or freezer bag and store in the freezer until needed.  Rice in the rice cooker is fairly straight forward as are the veggies but the rice in those part cooked bags is also good in these types of situations and is ready in minutes.

Chicken Pesto Pasta can be as easy as boiling up the pasta, throwing in some veggies, cooking the chicken and mixing all together with pesto, healthy, tasty, quick & achievable! Yes?


Tacos don’t just have to be on a Tuesday.  The chilli can be made in advance and frozen and then they can pick and mix to their hearts content with the fillings when the time comes to eat it.


Of course there’s always trusty old Spag Bol, or a slightly different take is Allspice Lamb & Zucchini Pasta, the sauces can be frozen and just the pasta needs to be cooked on the night.  Steak & 3 Vege or lamb cutlets is also achievable don’t you think?

Some easy lunches are:


Super quick & easy homemade pizza using lavosh or mountain bread and whatever favourite topping they like.

I often make a batch of Chicken & Vege Sausage Rolls and freeze some for lunches.

Then of course there’s toasted sandwiches, the classic Tuna Melt,


or many ways with English Muffins


Last, but not least there are always eggs;

Omelettes, scrambled, poached eggs


and of course my all time favourite boiled eggs & soldiers (hmm, probably time to update that photo!)

    Man cannot live on cheese on toast alone (even though my husband thinks he can,) so I left the hubster three weeks of meal plans and dinners in the freezer while I was away. Pies, curries and pretty much any meal with mince are our staples, although I met a lady at the nail bar, who was doing the same for her other half, and she even cooked and froze the rice in portions! But, that’s one step too far for me! I don’t think anyone will be going hungry at BES Central by the looks of things!

      I think my MIL has decided to come for a visit too while I’m away so I think the kitchen will be overflowing now!

    I’ve never gone away for more than a few days so usually make a massive pasta bake and leave it in the fridge, along with some pizza bases and ingredients in case the pasta runs out and/or they get sick of it. But as the workload increases and the travel needs get longer, I’ll be coming back for ideas. #teamIBOT

    These are great ideas! I’ve never left all three of my boys for more than a couple of days and I always like to make sure the fridge is well stocked with easy meals and snacks and there are also some frozen pastas meals for them too.

    What a great round up Vicki!
    I was just starting to think today about making sure the groceries are done and that there’s meals to grab or be easily prepared while I’m away. Zadada goes great in the cooking department, he’s the Nacho, scrambled egg and lemon meringue pie guru in our house (I think he’ll be just fine) but I think I’ll prepare them a meal or two just in case probably spag bol or maybe a lasagne if they’re super lucky ;), if they don’t eat it that’ll be one less meal I have to cook when I get home xx

    I have to admit I let them fend for themselves but that is mostly because my hubby is a good cook and does most of our cooking anyways lol. I do keep meaning to stock up on freezer meals just to make our life easier but then the thought of spending all that time in the kitchen… errrrr yeah no 😉 I hope you have the most amazing time at Problogger hun. I will be cheering you all on from the sidelines xx

    Lucky for me, my mum grocery shopped & cooked for my 2 terrors while I was at PB! This list is just a great list of family friendly meals!!! Love those little shepherd pie faces & that pesto pasta is going on my meal planner for next week for sure!! xx

      So lovely to meet you last weekend. The pesto pasta is so easy and I hide all sorts of green things in it! My MIL came to look after teh girls but as she doesn’t really know Sydney I wanted to have it all sorted for her!
