Your Weekly Feed #16 Quick, Easy & Tasty



Hello, Sunday night…..again!  I hope you have had a great weekend.  I’m just back from 4 days away at a the “Problogger” blogging conference which was fantastic.  I was like a sponge absorbing all the information and it was wonderful to meet, in real life, friends from the internet!  The daily grind still needs to happen though doesn’t it but I’m finding the inspiration from Your Weekly Feed to make dinner prep so much more enjoyable. I hope you are too?

My picks from last week are Chicken Cacciatore from Good Food Week, we actually had this on Wednesday night and it’s so good. When was the last time you had Chicken Cacciatore?


I haven’t had meatloaf for years but these mini BBQ glazed meat loaves from The Annoyed Thyroid caught my eye and I think the kids would enjoy these as well as us.


My contribution for this week is something that you can make on those days when you have no time, like today for me!  It’s also a great one for any day you want to go meatless.  Walnut, Goats Cheese Pesto on Pasta, yummy & easy!


This is seriously simple to make and the pesto is great as a dip with crackers or veggie sticks as well as on pasta.  The nuts and goats cheese make sure that there is protein in your meal too, covering all bases here!

Walnut & Goats Cheese Pesto Pasta


  • 1 C (100g) walnuts
  • 1 clove garlic
  • 80 g parmesan
  • 60g marinated goats cheese
  • a few grinds of salt & pepper
  • 30 g olive oil
  • juice of 1/2 lemon
  • 1 packet of spaghetti


  1. In a Thermomix or blender blitz the walnuts, garlic and parmesan (speed 9 / 8 seconds) to form a paste.
  2. Scrape sides
  3. Add the goats cheese, salt, pepper, olive oil and lemon juice and blitz again (speed 6 / 6 seconds).
  4. Set aside (if you are not using straight away put a layer of olive oil over the top and seal in a container then refrigerate for up to 3 days).
  5. Cook the pasta as per packet instructions, drain and put back into the pot. Add a heaped dessert spoon of the pesto and stir through.
  6. Serve up into bowls with a small dollop of the pesto on top and a couple of walnuts as garnish!

    Thanks for the shout out… we had the meat loaves for dinner tonight and I am pleased to report they are as good as I remember, only better! Your pasta looks full of yum!
