We’re baaaaaack!  These weeks just keep rolling by don’t they, I hope you’ve had a good one?  We’ve actually put the house up on the rental market now so the reality if the move is getting closer (and I have to keep the house tidy!) but the cooking keeps on keeping on too!

I wasn’t the only one with pesto on my mind last week.  I’m loving this Chilli Pesto Pasta from A Travelling Cook & Cate’s idea of having pesto on toast with the left overs.

My contribution for Your Weekly Feed this week is Steak Hash, a healthy, flavoursome, filling meal with minimal effort required!  Perfect for a quick & easy meal that the whole family can enjoy.

Shall we jump straight into the recipe?

Steak Hash

Ingredients

  • 2 Tbsp olive oil
  • 1/2 brown onion, thinly sliced
  • 1 garlic clove, crushed
  • 2 tsp sumac
  • 1 sweet potato, peel and cut into bite sized cubes
  • 3 potatoes, peel & cut into bite sized cubes
  • 2 carrots, peeled and cut into disks
  • 500 g beef stir fry strips or steak cut into strips
  • 1/2 red capsicum, thinly sliced
  • 1 small broccoli cut into florets
  • 1 C baby spinach
  • salt & pepper to taste

Instructions

  1. Heat 1 Tbsp of the oil in a large frypan and add the onion and saute until it starts to soften
  2. Add the garlic and sumac and stir through
  3. Add the remaining olive oil, sweet potato, potatoes & carrot and cook for about 5 minutes, stirring
  4. Add the steak and stir through then add the broccoli & capsicum and cook until the steak has browned and the veggies softened
  5. Add the baby spinach and stir through until wilted
  6. Divide up into serving bowls and enjoy

    Yum!! We had a really late lunch today for my sister in laws birthday and I couldn’t think of what to have for a light dinner – but that pasta is definitely calling my name. Yummo!!!!
