How has your week been?  We had a quick trip to Melbourne this weekend because we don’t have enough to do at the moment (!) but it’s so important to make time to visit dear friends isn’t it and dear friends they are.  It was actually a nice escape from the overwhelm of moving. Dinner was still here on our return though (gah!) & GT is actually in town for the week so it will be a great opportunity to use up all the steaks he loaded up the freezer with before he left!!!  I’m so grateful for all the yummy dinner inspiration that is coming through in Your Weekly Feed and the girls and I have been having a great time experimenting (ok, maybe just me!)

My Your Weekly Feed co-host Kim of Land of Zonkt has put us on to Chicken Schnitzel Rice Paper rolls which the girls & I had a great time making for dinner this week and left overs went in the lunch boxes the next day.  I love it when that happens!

I have been a tad over indulgent on the food front lately I’m trying to reign it back in a bit and eat a bit cleaner (do I say that every week?).  The glimpse of Spring last weekend moved salads up in the list in my mind but as it’s still cool warm salads are the go I think.  This warm Poached Chicken, Avocado, Broccoli & Brown Rice salad is one that the whole family can enjoy, is easy to make and is healthy and nutritious.  The dressing gives it a bit of zing to make it more interesting.  If you are using pre-cooked (or left over) rice it only takes 15 minutes from whoa to go too!

Poached Chicken, Avocado, Broccoli & Brown Rice Salad

Ingredients

    For poaching the chicken
  • 2 chicken breasts (you could use a BBQ chook or left over roast chicken if you didn't want to poach)
  • 2 bay leaves
  • 2 cloves garlic, smashed
  • 1 spring onion, roughly chopped
  • a few grinds of salt & pepper
  • For the rest of the salad
  • 2 C brown rice, cooked as per packet instructions (can be made ahead and headed up)
  • 2 avocados
  • 2 1/3 C broccoli florets
  • 4 spring onions, thinly sliced on the diagonal
  • For the Dressing
  • 2 Tbsp lemon juice
  • 1 Tbsp sweet chilli sauce
  • 1 Tbsp soy sauce or Tamari
  • 2 tsp olive oil

Instructions

  1. Heat a thin layer of water in a large pan, place the chicken breasts in the bottom of the pan and top with water until they are just covered. Add all the aromatics and cover. Bring to the boil and then simmer for 8 - 10 minutes until they are cooked through.
  2. Once cooked remove from the water and shred with 2 forks
  3. In the meantime steam or blanch the broccoli
  4. Divide up the rice, chicken, broccoli, avocado and spring onion between 4 serving bowls
  5. To make the dressing combine all the ingredients and the then pour over the salad
  6. Toss through and eat warm

    Good for you having some time out with special friends. It’s been busy in this neck of the woods too, (whenever I say something like that to my mum she says ‘you’re always busy’) But the last 4 weeks ever or so have been super busy and I I don’t think things will slow down until after the end of September…….we’ll see?
    Loving the look of your Brown Rice Salad and I’m loving that it’s so easy to make. Kims rice paper rolls are still on my list too, nothing beats good fresh homemade food does it?!

      All about the quick & easy here! This year does seem to have ramped up on the busy front so it was great to have a weekend off! I do hope you get to slow down soon too. x

    Sounds like you had a fun weekend away – just what the doctor ordered! Great picks from last week, I’m determined to try and make my own rice paper rolls, I love them so! I’m loving the sound of your salad, especially that the dressing is full of flavour but low on oil! Winning! Hope you have an ace weekx

      Sammie the rice paper rolls were so easy I don’t know why I hadn’t done them before – plus they are delish! The salad is great for Spring! x
