Bacon, Egg & Roasted Sweet Potato Frittata

As you know I love all things eggs so Frittatas are on high rotation in our house especially baked ones that you can just whack in the oven.  Often on Sunday nights (when we are not having Boiled Eggs & Soldiers of course) we have my Crisper Lurking Vegetable Frittata where the contents of the bottom of the fridge get chopped up and thrown together.

This Bacon, Eggs & Roasted Sweet Potato Frittata is a step up from the Crisper Lurker but pretty straight forward just the same and really yummy.  You can roast the sweet potato & carrot ahead of time if you want or steam or microwave for speed.

I find frittatas are great for a light lunch or dinner & we even make them into muffins for lunch boxes too. Do you?

Serve with a green salad and you’ve got a healthy, tasty and easy meal in no time, also a gluten free one if you need that too.

Bacon, Eggs & Roasted Sweet Potato Frittata


  • 1 large sweet potato diced
  • 1 carrot, diced
  • 3 spring onions, thinly sliced
  • 4 bacon slices, thinly sliced
  • 2 Tbsp parmesan cheese, finely grated
  • 6 eggs, whisked
  • 250 ml milk
  • 1 Tbsp chives, finely chopped
  • salt & pepper to season to taste


  1. Preheat oven to 200 degrees and roast the sweet potato & carrot for 20 - 25 minutes (this can be done ahead or steamed or microwaved but roasting gives it a delicious flavour).
  2. Turn the oven down to 180 degrees and grease a pie or quiche dish.
  3. Mix the spring onions, bacon & parmesan in with the sweet potatoes and carrots and then line the prepared dish .
  4. Whisk together the eggs, milk, chives, salt & pepper and then pour over the veggies
  5. Bake in the oven for 20 minutes or until set
  6. Can be enjoyed hot or cold and is great with a salad.

    OMG! this sounds delicious!
    I have some sweet potato sitting there actually, I think I’ll whip this one up over the weekend. Neva is a massive egg fan and the sweet potato addition is fabulous.
