In My Kitchen – September 2015

Wow, that’s another month that has flown by and now we are into Spring which I have to say I’m pretty happy about, how about you?  I’m joining in again with the lovely Celia of Fig Jam & Lime Cordials “In My Kitchen” series.  Jumping right in this month we have been having fun with fruit, in particular drawing on bananas!

Miss E came home from school asking to make a “Green Smoothie“, no idea how that came up in an 8 year old discussion but we made one together for breakfast the next day and she loved it, no complaints here (she also had crumpets!)

She’s been wanting to try all different types now which is great, we do them in the Thermomix which means the whole fruit and/or vege can go in and that way we retain the fibre. She also liked this Purple Power Smoothie which has frozen mixed berries, banana, almonds and I’m not sure what else she put in but it tasted great!


I’ve been putting chia seeds in muffins, like these Lemon Ricotta ones (which turned out a bit more “rustic” than expected!)


Still on muffins we all enjoyed these “Almost Totally Healthy” Raspberry Swirl Muffins (also quite rustic looking!).


I donated a prize to the school Trivia Night Silent Auction – a weeks worth of lunch box treats so thats why there was so much baking going on, it wasn’t just muffins but a loaf from pantry staples too, Honey Butter Loaf to be precise.


So easy to make and great for lunch boxes or afternoon tea.  A bloggy friend tried it and added 1/4 C peanut butter to the mix (because peanut butter & honey) which she said tasted fantastic too.

I’ve been making some yummy but very easy meals as part of my Your Weekly Feed link up, we’ve had;


Curried beef with vegetables and quinoa as something a bit different to spag bol.

A super simple Steak Hash with vegies.


So it wasn’t all about meat we also made some walnut & goats cheese pesto pasta which was an experiment that worked!


For a long time I’ve been wanting try my hand at rice paper rolls and when a friend (Land of Zonkt) shared her recipe for chicken schnitzel ones I thought they’d be great to try with the girls for dinner


they went down a treat, they loved making them and there was enough for lunch boxes the next day too which made me a happy lady as well!

And now to leave you on a sweet note I made some chocolate walnut truffles to take to a friends house one night and I have to say that they were so, so, so good, the added Frangelico helped I’m sure!


I’ve only got a few weeks left in this kitchen before our big move to North Queensland and then will set about planning a renovation of the kitchen in our new house which is a bit exciting although I’m very sad to be leaving here.  Cooking has been a nice distraction from decluttering and packing boxes!

    That power smoothie looks awesome. I love juicing and smoothies.
    I recently felt so stuck in the kitchen for what to make for dinner with two defrosted chicken breasts. Just had to clarify that they were in fact chicken. haha
    I ended up putting them in the pressure cooker and making mexican shredded chicken, and then served them on sweet potatoes and potato wedges, with some homemade salsa. So easy. I couldn’t believe it turned out. The potatoes were instead of tortillas. Cause I like to try and eat paleo though the week. Don’t shoot me. haha.

    Your friends are going to miss you and your delicious treats those truffles look fantastic! I love making green smoothies in the Thermomix – so easy and so delicious. I think you’ve just given me the motivation I need to get back on the Green Smoothie Train! PS I’m a lovin’ those muffins! Nom!

    Cuddling bananas! i think you should start every IMK post with a fruit drawing. Nothing wrong with a rustic looking bake – I can’t do pretty muffins or cakes so I’m going to start calling everything rustic from now on 🙂 You guys always eat so well everything looks delicious.     Love your bananas! It reminds me of a friend and his brother who (when they were young boys) carved BUM on a small courgette and watched it grow into a marrow.
