Mums Quick Italian Style Beef

My Mum, Sally, is actually contributing this recipe rather than me as I haven’t been in the kitchen at all other than packing and unpacking all the stuff, (which we still have way too much of!) We stayed at Mum’s for a few days before we moved to Queensland and she made this retro classic from my childhood which we just had to share.

Introducing Marvellous Mum’s Quick Italian Style Beef, in keeping with the retro theme Mum wants you to take special notice of the Corning Ware dish, an original from 1968, a wedding present that is still giving, and the serving spoon another 1968 classic! Amazing that they have lasted and they are used pretty much on a daily basis, just goes to show that quality lasts!

Mum used to make this dinner for us when we were teenagers and she never knew how many people we would be bringing home with us (sorry Mum). She liked it because you can just keep on adding extra quantities depending on how many there are for dinner.

Quick Italian Style Beef

To complete the whole retro thing dinner was served on an original tulip round table with 1970’s wine glasses, 1980’s placemats and cutlery from one of those hanging thingos. Until we did this we hadn’t even noticed quite how retro everything was, hilarious! Most importantly though this is a really yummy meal, filling, hearty, easy and the girls wolfed it down too. I will be reintroducing it to our repertoire so the tradition can continue to the next generation!

Mums Quick Italian Style Beef


  • 3 tsp oil
  • 2 medium sized onions thinly sliced
  • 1 garlic clove, crushed
  • 500 g beef mince
  • 1/2 tsp dried oregano (can use fresh if you like but remember we are going retro today)
  • 1/2 tsp dried basil (" ")
  • 185g macaroni, cooked & drained
  • 470 g tinned diced tomatoes
  • 6 tsp tomato paste
  • 2 tsp paprika
  • sliced cheese to cover


  1. Preheat oven to 180 C
  2. Heat oil gently in a pan and add onions & garlic. Cook, stirring occasionally until soft & translucent.
  3. Add the mince into the pan and fry for 5 minutes or until it loses it's pinkness
  4. Stir in the oregano, basil, cooked macaroni, tomatoes, tomato paste & paprika. Increase the heat and bring to the boil, stirring constantly.
  5. Place mixture in a casserole dish & lay sliced cheese over the top.
  6. Bake for 20 minutes or until the cheese has melted and become golden brown.
  7. Serve with some greens & enjoy!

    I bet your mum is loving having you stay and yes, as teenagers we used to always have unexpected guests at home, poor mum having to cope with that. I’m sure my girls will probably be the same though. This is a handy classic to have on hand.
