Nearly Peri Peri Baked Fish with Lemon Coriander Rice

My contribution for Your Weekly Feed # 25 is a Nearly Peri Peri Baked Fish with Lemon Coriander Brown Rice. It’s “nearly” because I didn’t use chilli so the girls would eat it but by all means add some hot chilli and make it Peri Peri. It’s not the most glamorous looking meal but it is really tasty, healthy not to mention pretty easy to make too.

I got the inspiration for this from a random cookbook the supermarket was handing out for free a few years ago and I found it again when packing up for the move, inspiration can strike anywhere!!  I’m sharing it with you now so that you can have another quick & easy fish dish up your sleeve.

Nearly Peri Peri Baked Fish with Lemon Coriander Brown Rice


    For the Fish
  • 4 white fish fillets
  • 1 garlic clove, crushed
  • 1 Tsp tomato paste
  • 1 lime, zested & juiced
  • 1/2 tsp sweet paprika
  • 1/4 tsp ground tumeric
  • 2 tsp olive oil
  • salt & pepper to taste
  • For the Rice
  • 2 -3 C brown rice
  • 1 lemon zested & juiced
  • 1 Tbsp fresh coriander, finely chopped
  • 1 garlic clove, crushed
  • Salt
  • Greens of your choice


  1. Preheat the oven to 200 degrees and grease or line a baking tray with baking paper
  2. Prepare the rice as per packet instructions
  3. Mix into a paste the garlic, tumeric, tomato paste, paprika, lime zest & juice, salt, pepper and olive oil Place the fish fillets into the baking tray and then brush the paste over the fish and bake in the oven for about 15 minutes
  4. Meanwhile prepare your greens and combine the lemon & coriander in with the rice
  5. Once all cooked plate up and enjoy

    Yum – I would probably go all the way and add the chili as my kids don’t mind spice.

      It’s great your kids like chilli – mine are ok with a tiny bit.

    Oh yum! I want this for dinner tomorrow. I don’t have fish for dinner nearly as much as I would love to. Fish is by far my favourite meat (actually I would say that seafood makes up 95% of my meat intake). I love the idea of a nearly peri peri flavour too. Delicious!
