Holidays!  Tonight is the eve of our house being packed up and shipped north.  It’s all happening here, how about with you?  I’ve been trying to use up lots of food from our freezer and pantry in between a monster declutter, minor repairs to the house and sick kids!  But all that is too tedious for words so let’s talk about Your Weekly Feed instead shall we?

Last week we had a great variety of meals linked up, sweet, savoury, snacks, drinks and all yum. It’s hard to choose just 2 to highlight but I can’t go past The Annoyed Thyroids fancier take on chicken dippers with her Sesame Chicken with Soy Dip as they would go down a treat here.

Still on chicken, I’ve eaten a lot of Peri Peri Chicken but never made it myself, have you? I really like the sound of Good Food Week’s Peri Peri Delicious Chicken

Because it’s Sunday night, holidays and the fact that I haven’t really had much time to cook lately I thought I would share 3 regular fall back meals for us, they all involve toast and avocado, all are super easy and can be breakfast, lunch or dinner! Yay! Right?

First up is Avocado, Persian Fetta & Dukkah on Toasted Sourdough

The how to speaks for itself; toast the bread of your choice, I used sourdough, smash 1/2 an avocado with a fork and spread on the toast, scoop out your favourite marinated fetta/goats cheese and with some of the oil put on top then sprinkle 1 tablesppon of dukkah across the top.

Next is Avocado & Poached Eggs on Toast

Again toast of your choice, smash the avo and poach the egg – breakfast, lunch or dinner done in 5 minutes flat!

Number 3 is the classic Tuna Melt

Mmmhmm, you want one now don’t you? Toast the bread, mash 1/2 an avocado and spread on the toast. Crack open a can of tuna, drain it and put on top of the avocado, add thinly sliced cheese to top it off. Whack it under the grill for about 1 minute or until the cheese has melted, season to taste, done!

What are your fall back meals when you’ve got nothing left?  We also regularly have boiled eggs & soldiers, obviously!

    Oh thanks so much for featuring my peri peri chicken. I love avo and persian fetta on toast – I never thought of adding a little dukkah, so that’s something that I want to try ASAP.
