Hello from Townsville!  Given that we are in the middle of moving, we have arrived but our house contents don’t until tomorrow (& I don’t even know if I’m Arthur or Martha at the moment) the ever delightful Sammie of The Annoyed Thyroid has kindly stepped in to guest host for me today.

Sammie is a regular contributor to Your Weekly Feed, has some fabulous recipes on her blog including Thermomix ones, she likes to bake, eat, run (not at the same time) and look at the bright side of life. Howdee partners! It’s not every week I get to blog sit one of the most delicious blogs on the interwebs, so let’s get this party started, shall we?! How was your week? I finished up at work. I’ve left teaching behind to study counselling, blog better, bake cakes, (and find someone to feed them to,) be a domestic goddess and wannabe stay-at-home-doggy-mummy. I think that’s enough to keep me out of mischief for the foreseeable future!

It was totes hard to choose from the wide variety of deliciousness that was linked up last week. It’s a tough job, but somebody has to do it!

If there was an Olympic medal for salad dodging, I’d definitely get gold. If only every salad, looked as good as Kim’s Tandori Rice Salad, I’d get gold for salad consumption! Kim’s so clever, she even made a nifty little video to match the recipe. As food videos go, I totally think she should get an Oscar!

As much as I dodge salads, I love pies and Bron’s Veggie and Lentil Cottage Pie was no exception. It’s packed with goodness of all kinds from veggies to chia seeds!

Baked potatoes are the ultimate comfort food and I don’t know about your neck of the woods, but it’s definitely been cold enough for a jacket spud in these parts. I love the look and the sound of Bec’s 12 Minute Baked Potato and she’s giving away a microwave, that has so many features, it’s almost like magic! Remember, you have to be in it to win it!

The Annoyed Thyroid Beef & Lentil Pies

The Annoyed Thyroid's Beef & Sweet Potato Pie

55 minutes


  • 1 tablespoon olive oil
  • 1 medium brown onion, chopped finely
  • 2 cloves garlic, crushed
  • 500g beef mince
  • 1 tablespoon ground cumin
  • 2 teaspoons ground coriander
  • 2 tablespoons tomato paste
  • 1 cup (250ml) beef stock
  • 400g canned brown lentils, rinsed, and drained
  • 1/3 cup chopped fresh coriander
  • 600g sweet potato, chopped roughly
  • 20g butter
  • 2 tablespoons milk
  • 1/2 teaspoon cumin seeds


  1. Preheat oven to 220C (200C fan-forced).
  2. Heat the oil in a large saucepan and cook the onion and garlic until the onion softens.
  3. Add the beef and cook, stirring until browned. Add the ground cumin and ground corinader and cook, stirring until fragrant. Add the tomato paste, stock and lentils and bring to the boil.
  4. Simmer, uncovered for about 10 minutes or until the sauce has slightly thickened. Stir in the coriander and season well.
  5. Meanwhile, make the mash in the Thermomix. (See tip below.) Alternatively, boil, steam or microwave the sweet potato until tender, then drain. Mash the sweet potato in a large bowl with butter and milk until nice and smooth. Season to taste.
  6. Spoon the mixture in to 4 pie dishes. Top with the mash and sprinkle with the cumin seeds.
  7. Bake the pies for about 20 minutes or until nicely browned.

Beef & Lentil with Kumara Mash Pies

TIP! If you have a Thermomix you can make the mash in your machine with the following ingredients. Simply skip step 4, and instead, use 500g sweet potato, 120g milk, and 10g butter. Make the mash in the machine as usual, and then proceed from step 5.
