Steph's Joy Strawberry Sour Cream Cake

I’m lucky to have some very lovely blogging buddies who are helping me out this week during our relocation. The delightful Steph of Steph’s Joy is bringing us all a lot of joy today with her Strawberry Sour Cream Cake. One word…YUM and also a couple more “thank you”,  so much Steph.

I hate wasting food and often try to use up the ingredients in the fridge with a short life span, i.e. an expiry date. Well this past week the sour cream was to get ditched so I set myself a challenge to use it. As strawberries are currently in abundance, and oh so cheap, I thought I’d use these two ingredients to make a cake. Introducing Steph’s Joy Strawberry Sour Cream Cake.  It’s a little denser than normal cakes but so delicious.

Steph’s Joy Strawberry Sour Cream Cake


  • 2 C (250g) plain flour
  • 2 tsp baking powder
  • 3 eggs
  • 210 g caster sugar
  • 1 punnet strawberries
  • 3/4 C sour crea,


  1. Preheat the oven to 160 degrees and line a loaf tin with baking paper
  2. Cream butter & sugar together
  3. Add one egg at time & beat until combined
  4. Sift in flour and baking powder & fold into the butter mixture
  5. Fold in sour cream
  6. Puree 3 - 4 strawberries
  7. Cut up the remaining strawberries into small chunks
  8. Fold in the puree into the cake mix
  9. Spoon 1/3 C cake mix into the prepared tin, layer with cut up strawberries and repeat with the remaining mixture.
  10. Bake for 50 - 55 minutes or until golden
  11. Best enjoyed with a cuppa!

    Yum, love strawberries and this looks like a delicious cake. I’m pretty confident that is how 99.9% of my recipes are created! When the food looks a little sad I will feel inspired to make it into something delicious.

    Yum! I love cooking with what’s in season and I’ve been baking everything strawberry recently. Yay for sour cream, it’s one of my favourite baking ingredients! Love this, Steph! x

      My pleasure thank you for your lovely cake! We will sleep in the new house for the first time on Monday – it’s a bit of a construction site at the moment but we are looking forward to being in.

    Oh I do this all of the time, I absolutely HATE throwing food away! What a fab looking cake, I’ve got a big stash of strawberries in the freezer that I can use to make this too.
