Wasn’t Sammie of The Annoyed Thyroid a great blog sitter last week for Your Weekly Feed? Thanks so much Sammie.  All the delicious contributions were a fabulous distraction to the ins and outs of relocating.  I haven’t yet had a chance to make anything in the kitchen of our new house as it’s been a tad hectic with a quick trip back to Sydney tonight thrown in for good measure too!  My Mum has come to the rescue with a meal for us this week but before we get to that everything looked so good in last weeks link up, as usual it’s so hard to only pick two but …

As I said my Mum is actually contributing a recipe this week rather than me as I haven’t been in the kitchen at all! Introducing Marvellous Mum’s Quick Italian Style Beef which is a retro classic from my childhood, she made it for dinner for us when we stayed with her just before we moved and I had to share.

Mum wants you to take special notice of the Corning Ware dish an original from 1968, a wedding present that is still giving, and the serving spoon another 1968 classic!  Mum used to make this for us when we were teenagers and she never knew how many people we would be bringing home with us for dinner (sorry Mum). She liked it because you can just keep on adding extra quantities depending on how many there are for dinner.

To complete the whole retro thing dinner was served on an original tulip round table with 1970’s wine glasses, 1980’s placemats and cutlery from one of those hanging thingos.  Until we did this we hadn’t even noticed quite how retro everything was, hilarious!  Most importantly though this is a really yummy meal, filling, hearty, easy and the girls wolfed it down too.  I will be reintroducing it to our repertoire so the tradition can continue to the next generation!

Quick Italian Style Beef

Mums Marvellous Quick Italian Style Beef

Ingredients

  • 3 tsp oil
  • 2 medium sized onions thinly sliced
  • 1 garlic clove, crushed
  • 500 g beef mince
  • 1/2 tsp dried oregano (can use fresh if you like but remember we are going retro today)
  • 1/2 tsp dried basil (" ")
  • 185g macaroni, cooked & drained
  • 470 g tinned diced tomatoes
  • 6 tsp tomato paste
  • 2 tsp paprika
  • sliced cheese to cover

Instructions

  1. Preheat oven to 180 C
  2. Heat oil gently in a pan and add onions & garlic. Cook, stirring occasionally until soft & translucent.
  3. Add the mince into the pan and fry for 5 minutes or until it loses it's pinkness
  4. Stir in the oregano, basil, cooked macaroni, tomatoes, tomato paste & paprika. Increase the heat and bring to the boil, stirring constantly.
  5. Place mixture in a casserole dish & lay sliced cheese over the top.
  6. Bake for 20 minutes or until the cheese has melted and become golden brown.
  7. Serve with some greens & enjoy!

    I love the recipe and all the retro trimmings – go your mum! I love dinners like this, they’re oldies but goodies. I bet you’ve had a massive weekend – I can’t wait to hear all about it! x
